Easily Upset
If you know me at all you know I get upset quite easily. Having one tiny thing go wrong can ruin my day. I’m working on it, I assure you.
Yesterday, I tried to pull the baking powder out from behind the olive oil and instead pushed the jar out, where it proceeded to hit the bowl I was mixing healthy banana cranberry oat bars in, then fell on my kitchen floor. I was left with an oily and glass shard covered floor and banana goo dripping down both my apron and my cabinets. Yes, I think this could be considered one of those times when my day felt ruined.
Instead of crying, which is what I felt like doing. I picked up the bigger pieces of glass, wiped up as much oil as I could and made several desperate phone calls for advice on how to clean it up. Turns out all you need is a degreasing soap like Dawn plus some hot water. And now I can cross ice skating off my winter goals list.
To avoid feeling flustered for the rest of the day, I took a look through my pictures and realized I’d been having a pretty good day and that it needn’t turn into a bad one just because of some spilt milk oil.
In fact, Sunday was a pretty good day too. I enjoyed morning yoga and some dates filled with dough maple cinnamon almond butter.
Then I got a massage, ate lunch, read, took a nap and yoga-ed some more. We took a free beginner’s yoga. We heard it was good because it was slow and the teacher breaks the poses down. I thought that would make it easy but man, it was tough. I’ve never done so many chaturangas!
I’ve also developed an addiction to Field Roast Grain sausages, as evidenced by lunch the past two days. Just slice and brown in a pan, then serve with ketchup.
Yesterday’s lunch.
Yes, I still have leftover sweet potato casserole from Christmas… Gross? Maybe. Still delicious? Heck yes.
And Monday’s lunch.
I love butternut squash soup!
1/2 a sausage + greens drizzled in balsamic and honey on the side.
Awesome lunches weren’t the only thing I accomplished. I also enjoyed sweet potato casserole oats in a jar, went grocery shopping and rocked a 5 mile run outside.
I sent Jenn off with some homemade peanut butter before she left and I was more than happy to keep a couple tablespoons that didn’t fit in the jar for myself.
Topped with apple for some crunch. Good alternative to granola if you want something less calorie-dense.
I mixed in the tiny bit of sweet potato casserole I had left. Can you see the orange flecks? It tasted amazing!
My friend Claire got me this cute winter mug, which I gladly filled with tea.
After my run and a much needed shower I got to work on a very special recipe.
After my mac and cheese flop a couple weeks ago, I decided I needed to redeem myself. But this time, I made the real deal. Butter, cheese, flour and all.
When I came across The Pioneer Woman’s macaroni and cheese recipe it was all I could do to keep from drooling all over myself and my keyboard. Healthy? Not so much but I decided that some recipes are worth the extra calories/fat/carbs and this looked like one of them.
Nope, I don’t regret my decision.
Happy Tuesday!
Don’t Be Such a Crab
It might be a new year but my breakfast habits haven’t changed one bit.
Oatmeal galore. And some difficult topping decisions to make.
Cranberries are a new oatmeal mix-in staple. I love having one in almost every bite.
Everyone tasted my roasted maple cinnamon almond butter on NYE and all agreed that it was pretty good.
And I rang in the new year with some festive looking oats yesterday morning.
Oh how I love you, little blue spoon.
After breakfast I did lots of Jersey Shore watching (I’m not proud of this!) then went out to lunch with Jenn, who’s moving to California today 😦 But I know she’s only a text away and believe me we text A LOT.
Beanie and I hit up the yoga studio by me for day #4 of yoga. I’m going to do a final reflection on my week of yoga later but just know that I am LOVING it. So much that I’m going to two classes today!
Dinner was enjoyed at my parent’s place. My mom always does a special New Year’s day dinner. Does anyone else celebrate the day instead of the eve?
My mom has a new found love of goat cheese, jam and crackers.
The makings of a salad.
Love this salad my mom makes with beets, goat cheese and a homemade orange vinaigrette.
Then we broke into the crab. Pun intended.
I’m sure my mom was getting a kick out of how badly all of us non-New Orleans natives we were eating the crab. I’m pretty sure I had it all over my shirt and lap.
Dips on the side.
Ended the night with Easy A. It was alright but I wasn’t expecting much.
Off to yoga class #1 for the day!
Ringing in the New Year
Can you believe another year is starting? I hope you all had a fun and safe New Year’s Eve. It was -6 in Colorado last night so Joey and I had dinner with a few friends then hightailed it back home and there’s nothing you could have said to me to make me go back out into the cold, except maybe “The Woodchuck is on the porch”. A group of us ended up lounging in our PJ’s and the girls dominated the boys in an intense long game of Trivial Pursuit.
We were up till 3 AM and I don’t plan on seeing another person awake in this apartment until at least noon.
I however was driven from bed by hunger, go figure and now I have some quiet time to reflect on what was in 2010 and what will be in 2011.
2010 was a wonderful year. I published my first ever blog post, turned 21, decided to train for a half marathon, vacationed in Glenwood Springs, took a road trip to Las Vegas and California (read about it here, here, here, here and here), lost a pet 😦, visited New Orleans with my mom and sister (Part 1 and Part 2), ran 10 miles and cried because I was so proud of myself and ran a half marathon (read about one of the best days of my life here).
And that’s not all. No, I baked, cooked, tasted, laughed, photographed and enjoyed so many new things and discovered confidence in myself that I never knew I had. I think I’ve grown so much this year and I plan on continuing that on into 2011.
I’ve toyed with the idea of making New Year’s resolutions for the past couple of days and I’ve decided that writing a list of things to get done stresses me out. Instead I’m making a few big resolutions that I can carry on throughout the year.
New Year’s Resolutions:
- Be present.
- Feed and nourish myself <— Sorry, Beanie, I had to steal this 😛
- Don’t be so serious
Don’t get me wrong, I have a million other little goals I’d like to accomplish but honestly, I kind of like who I’ve become this year and I don’t want to make many changes. And if you ask me, that’s a good thing.
Now let me leave you with a little survey that Chelsey tagged me in.
