Lauren

Once upon a time, this was a “healthy living” blog. My use of quotation marks should pretty much explain my thoughts on the healthy living community. I once thought I was above running anything less than 3 miles, using real butter and eating at chain restaurants. Okay, I’m still above eating at Chili’s, but I digress. What you won’t find here anymore, is a daily food journal. I’m not going to tell you how to eat or how to live. I won’t pretend I don’t struggle, like a real human being. Or that I don’t have complete breakdowns about silly things like not being able to find my keys. I won’t tell you I’m a 22-year-old who knows exactly who she is and where she’s going, because well, I’m not. Except I really am 22.

Instead, what you’ll find here is me. Lauren, a girl who changes her mind about things on a regular basis, who sometimes loves and sometimes hates running, who is delighted by “good” food (and only I get to decide what “good” means to me), and who will always be, at her core, a dancer (even if it’s just in my living room), a daughter and sister, a serious stress-case at times and a light-hearted goofball at others. I promise no matter how random the things I write might be, it will always be 100% from the heart and 100% real.

    Hey there, I just discovered your blog and wanted to give you props! It’s really well-written, and I’m looking forward to your future posts. I am actually moving to Boulder in September (I’m from Colorado Springs originally, but moved out east for college), and I can’t wait to return to my homestate! I’ll have to ask you for Boulder restaurant recommendations when I get there…:) I’m clueless about the area (except I do know that it’s GORGEOUS) and perfect for running! Holla!

      Hey Adam, I’ve only ever made vegan cupcakes once and I got the recipe off Edibleperspective.com

      I know there’s soy products that can be used instead of butter as well as non-dairy milks like almond, rice, hemp, oat. I’ve also heard of using vegetable oil, avocado, apple sauce, etc. instead of dairy. I would suggest looking up a vegan recipe that would use these kind of alternatives.

    just found your blog and love it! I agree- eating healthy is much easier than it seems if you just start making it a lifestyle- and when you start running you eat healthy to push you through your runs, —i think since the focus isn’t on losing weight, you DO lose weight- and never feel deprived in the meantime! 🙂

    Hi, Lauren!
    I was just taking a look at your site, it’s really interesting. I do congratulate you. I took some time to prepare one of the salades you proposed (I mean the one with greens, carrot, tomato, avocado, s & p and balsamic). It really got the encouragement of my mum who thought it was my invention. Late at night yesterday, I surfed your site and show her your pictures. She was amazed by the food you suggest for good and stable health.
    Anyway, I do invite to have a look at my site which I have put on line three days ago.

    Awesome blog, Lauren. Keep up the great work.

    I love seeing people displaying their passion for nutrition and food. Hell, all success stories in general are inspiring.

    I never could get into running. Before last week I had not run in over a year. When I was younger I became insulin resistant, and started a keto routine, largely diminishing most carbs (except carbs from vegetables). Didn’t want to run the risk of screwing with glycogen stores, so I started lifting and doing HIIT and never looked back. Lifting is the greatest stress reliever known to humankind!

      Running isn’t for everyone. Some days, I don’t even like it! I think it’s important to find a physical activity that you enjoy and it sounds like you have.

    Hey Lauren, I posted a comment on here nearly four months ago.

    Ran 10 miles a couple of weeks ago. It kicked my ass (for lack of a better phrase). Loved it, though. Battling the ‘forces of life’ while pushing the body to its limits… it’s the best.
