Living with a Meat Lover

I don’t love meat. 

Shocking, I know, considering the number of meat recipes you find on this blog, right?

Wrong.  You’ll find none.  And that’s because while I will eat meat, I don’t cook it.

And there’s a number of reasons why.

A) I suck at it.  Even when I ate meat regularly, I was constantly frustrated when my chicken was burnt on the outside, but still pink on the inside.  What gives, chicken, what gives?

B) I’m cheap.  Good quality meat, however, is not.  There’s plenty of other forms of protein that cost much less.  No, shrimp, I’m not looking at you, I’m looking at those beans behind you.

C) I’m a meal planner and I can’t really plan to crave meat on say, next Tuesday.  Actually, I can pretty much plan on not craving meat 95% of the time.

So that’s that, but as it turns out my better half significant other loves him some meat.

It was pointed out recently that Joey is suffering by living in a meatless home.  And by pointed out, I mean my Dad wandered around my kitchen last Tuesday night in search of the meat portion of our dinner and kept asking “Where’s the beef?”  Then he asked me how Joey could survive when I don’t cook meat.

And by pointed out, I also mean that my mom is now making double portions of brisket and sending me home with half to give to Joey.  Who will eat the entire portion in one sitting.

My response?

I’m offended, family!  Joey is fully capable of cooking himself meat.

Which he apparently only does when I’m on vacation.

Also, Joey can and will order meat whenever we go out to dinner or whenever he buys his own breakfast/lunch while at work.  In other words, I think he manages just fine.

Plus who needs meat when I make a mean chickpea burger?

Well it seems I’m not the only wondering where summer went.  I’m especially wondering it today, as it’s cloudy and cool here in Colorado.  It’s making me feel all kinds of sleepy.  Good thing I have a massage and candlelight yoga planned for today 🙂

But not before a little partying.

Apparently I was a little camera happy yesterday and took a slew of food pictures so let’s just roll with it and consider this a slideshow edition of WIAW, shall we?

Breakfast:

Chocolate chip banana pancake stack, layered with homemade jam and freezer jam alternately and topped with chocolate hazelnut butter and maple syrup.

Lunch:

Leftover curry chickpea burgers, carrots/chips & hummus and a dessert failure, oops.

Dinner:

Thai Crunch Salad from the Peas and Thank You cookbook.

Except that I can’t follow directions and ended up making a few changes of my own that included adding soba noodles and using peanut butter instead of almond butter for the dressing.  What can I say, I’m cheap.

Has anyone ever had one of these?  I thought it was pretty good (thanks, Dad!).

Note how it has 360 calories and is considered a “meal bar” and I totally ate it as a snack.

Quite the ingredient list but apart from the last few ingredients, I knew what everything on the list was!

“It’s Never Too Late” Summer Checklist

If I had a dime for every time I’ve said “I can’t believe it’s already August,” in the past 9 days, I’d have enough money to make up for the fact that I’m only working 22 hours this week.

If only.

But in all seriousness, where did this summer go?  I can hardly remember July, and June?  I’m pretty sure the calendar just skipped over that month this year.  If I had actually made a summer checklist, it would have included hiking the Royal Arch, attending the Boulder Farmers’ Market and dining at the Chautauqua Dining Hall and for all those things, I would have had a check, check and check, but there’s still lots of small things I feel like I haven’t done yet this summer. 

Sunday marked the first night all summer that we fired up the grill.

And the first time all summer that we grilled a pineapple!

But I keep having to remind myself have Joey remind me, that summer is not over.

And even though I’ve yet to eat a really good Colorado peach, there’s still time.

And there’s still time to go on a picnic, attend the Colorado Shakespeare Festival, hike a 14-er,

grill corn, buy fresh cherries, go on evening walks,

and knock out that pile of veggie burger recipes I’ve collected.

So here’s to making the most of August.  Before September and the beginnings of Fall set in.  Because by then I’ll only be able to think about pumpkin.
