Mayer Madness
Why did I think working at 8 am the morning after a concert was a good idea? Because my love for John Mayer knows no bounds. This means I’m more than willing to switch my Wednesday night shift for a Thursday morning one so I can attend the JM concert at Red Rocks.
Reasons to be jealous of my life yesterday:
#1: Baked Peach Cobbler Oats
- Make oats
- Top with a layer of peach jam
- Follow by a layer of peaches
- Followed by a sprinkling of sucanat (or brown sugar)
- Pop in the oven for ~10 minutes
Jealous yet?
#2: Pesto Infused Quinoa
- Cook up a double batch of quinoa (save half for tomorrow)
- Mid-way through cooking pour out some of the quinoa water
- Mix pesto with quinoa water to thin it out
- Mix pesto, quinoa, and tomato chunks together
Beanie was almost drooling when I opened this container of food up in the car. The pesto smell is to.die.for!
I ate this meal on the road to Red Rocks aka the BEST CONCERT VENUE EVER

Did you know you can do a 5K at Red Rocks and the finish involves running up these crazy stairs??

As usual Mayer Mania prevented me from remembering to actually take pictures of John on stage (we’re on a first name basis).
I DID capture a video of Slow Dancing in a Burning Room but for some reason I can’t hear the sound when I play it so I’ll refrain from posting it in case the sound never actually recorded 😦
We didn’t get home till 12:30 — Did John forget that my bedtime is 10:30? So I CRASHED when I got home. Oh and thank god they gave out granola bar samples form Cascadian Farms (organic to boot) or I would have starved on the way home!
#1 REASON NOT TO BE JEALOUS OF ME: Not only did I pick up a morning shift but I also have class all afternoon and was already scheduled to work after class today, grrr! Cross your fingers that I make it through this 11 hours work/school day on ~5 hours sleep…

The Letter E
is for Extraordinary Eats and Excellent Exercise! And that is how I would sum up my day yesterday.
For the second day in a row my breakfast was oatmeal-less. The reason? My school schedule works out so that I only have time to eat lunch at 12 which is about 2 hours earlier than I usually eat so I’ve been trying to keep my breakfasts light so I have time to get hungry again by 12.
Greek yogurt, fruit and granola is the perfect light breakfast for me
The macaroon granola is really growing on me, as is Voskos Greek yogurt. Today’s flavor was vanilla bean, yummm

Sad news about our Ezekial bread: it molded in less than a week!! I think it may need to be refrigerated 😦 I had to make a mad dash to the grocery to grab more bread so I could make lunch. I went with Rudi’s, which is both organic and local and you can’t go wrong with that combination!
Positively Perfect Pesto Samich:
- Grill one small bell pepper till the skin starts to blacken then remove from grill and peel off skin — try not to be weirded out by how the pepper looks skinless…
- Layer one slice of bread with homemade vegan garlic scape pesto and bell pepper slices
- Layer second slice of bread with cheese of choice and fresh tomato slices
- Sprinke with a tiny bit of salt if your a sodium addict like me…
- Slap pieces together and slice straight down the middle, of course
- Prepare for your taste buds to be attacked by a burst of flavor!
Words cannot describe how good this sandwich was!

Snacking ensued once I got home from school 4 hours later
Joey and I set out on a 4.5 mile run and it went fantastically! I was really worried about my blisters (one of which I’m pretty sure is more of a cut than a blister) but I band-aid-ed and taped them pretty well and they didn’t bother me at all.
Haven’t looked at all the splits yet but I know the second mile was a 9:15, yay 🙂

Low & Slow Sweet Potatoes + The Perfect Baked Tofu (compliments of Ashley and Caitlin respectively)
I had to mess with the times/temperature a little so I could bake both at the same time but they both turned out perfectly! This is my go to recipe for sweet potatoes. They are seriously SPECTACULAR! (yes, I’m a fan of alliteration tonight)
I also cut up two green and yellow squash cuties and tossed them in a pan with olive oil, salt and pepper
I tried SO hard to avoid eating dinner at 8 so I could have some natural light to photograph in but I got behind schedule AS USUAL. Don’t think I haven’t noticed you’ve been setting earlier than usual, Mr. Sun. I’m not happy about this!
What time do you usually eat dinner? I used to freak out if I ate past 7!

Bean O’Clock
I strayed from my regular overnight oats yesterday in exchange for something a little more bready. I was craving carbs after my long run!

After struggling through 4 hours of reading The Mill on the Floss (hello HEAVY reading load for my Later Victorians class) at work I ventured out into the fresh air and joined my sister for lunch.
I’m also taking a class called “Bad Books” — bad as in wicked, that is. My professor has a giant arm tattoo and his tongue pierced, not your typical class or professor but both are totally awesome so far! Not totally awesome = sitting next to said teacher for an entire hour during lunch…
This salad didn’t do it for me today 😦
Greens, strawberries (these were phenomenal), pepitas & balsamic
I restocked on yogurt yesterday, oh AND apples. We I did such a bad job grocery shopping last week — we didn’t have any snack type stuff or extra fruit for me to bring for lunch. I made sure to pick up a bunch more stuff for this week.
I’d never had that brand of Greek yogurt before. It was pretty good — I forgot how wonderful creamy Greek yogurt is — but this wasn’t my favorite brand. I’m partial to Oikos (which I didn’t even buy!)
Remember Bean O’Clock? Everyone agreed it should be a Colorado tradition too so we all gathered around the Dorsey kitchen table for some red beans and rice.
My mom’s version is a lot different from my uncle’s. Hers are usually much thicker, although she thinned them out a bit today and she uses sausage and ham instead of pickled pork. I really don’t think you can compare the two recipes because they’re just so different and I love them both!
And then because we hadn’t eaten enough already (yes, you are sensing sarcasm here) my mom supplied us with some homemade bread pudding.
Do I sense some family competition going on here between my mom and my uncle??
Whoa, talk about leftovers!! I had a tiny piece because I was so full but it was spectacular. I expect nothing less from my mom — did you know she used to run a one woman catering company? I’d like to think she passed some of that food passion/cooking talent on to me — thanks mom!
I returned home happy and full 🙂
