The Letter E

is for Extraordinary Eats and Excellent Exercise!  And that is how I would sum up my day yesterday.

For the second day in a row my breakfast was oatmeal-less.  The reason?  My school schedule works out so that I only have time to eat lunch at 12 which is about 2 hours earlier than I usually eat so I’ve been trying to keep my breakfasts light so I have time to get hungry again by 12. 

Greek yogurt, fruit and granola is the perfect light breakfast for me

The macaroon granola is really growing on me, as is Voskos Greek yogurt.  Today’s flavor was vanilla bean, yummm

Sad news about our Ezekial bread: it molded in less than a week!!  I think it may need to be refrigerated 😦  I had to make a mad dash to the grocery to grab more bread so I could make lunch.  I went with Rudi’s, which is both organic and local and you can’t go wrong with that combination!

Positively Perfect Pesto Samich:

  1. Grill one small bell pepper till the skin starts to blacken then remove from grill and peel off skin — try not to be weirded out by how the pepper looks skinless…
  2. Layer one slice of bread with homemade vegan garlic scape pesto and bell pepper slices
  3. Layer second slice of bread with cheese of choice and fresh tomato slices
  4. Sprinke with a tiny bit of salt if your a sodium addict like me…
  5. Slap pieces together and slice straight down the middle, of course
  6. Prepare for your taste buds to be attacked by a burst of flavor!

Words cannot describe how good this sandwich was! 

Paired with a peach drizzled in almond butter — messy but delicious

Snacking ensued once I got home from school 4 hours later

Joey and I set out on a 4.5 mile run and it went fantastically!  I was really worried about my blisters (one of which I’m pretty sure is more of a cut than a blister) but I band-aid-ed and taped them pretty well and they didn’t bother me at all.

Haven’t looked at all the splits yet but I know the second mile was a 9:15, yay 🙂

Came home and popped dinner in the oven

Low & Slow Sweet Potatoes + The Perfect Baked Tofu (compliments of Ashley and Caitlin respectively)

I had to mess with the times/temperature a little so I could bake both at the same time but they both turned out perfectly!  This is my go to recipe for sweet potatoes.  They are seriously SPECTACULAR! (yes, I’m a fan of alliteration tonight)

I also cut up two green and yellow squash cuties and tossed them in a pan with olive oil, salt and pepper

I tried SO hard to avoid eating dinner at 8 so I could have some natural light to photograph in but I got behind schedule AS USUAL.  Don’t think I haven’t noticed you’ve been setting earlier than usual, Mr. Sun.  I’m not happy about this!

What time do you usually eat dinner?  I used to freak out if I ate past 7!

I seriously hope your day was equally full of Exceptional Events 🙂

    Yummmmm, what a delicious dinner!! I have some low + slows in the fridge waiting to be eaten, as part of my “clean the pantry” week, with all the moving madness 🙂 Peaches + AB is a great idea!

    delicious eats!!!! I found I had to freeze ezekial bread until I wanted to eat it = weird, but it worked.

    I like to eat at 6:30 – usually anywhere between 6 and 6:30 actually.

    I dont eat past 8 and can get quite neurotic about it. Drives the hubby nuts!

    All your food looks sooo good! And I used to freak out eating past 7 too, but now we always eat around 7:30. No biggie whatsoever. And sometimes I’ll even have dessert at 8:30 or 9. What madness! LOL 😉
