Mayer Madness

Why did I think working at 8 am the morning after a concert was a good idea?  Because my love for John Mayer knows no bounds.  This means I’m more than willing to switch my Wednesday night shift for a Thursday morning one so I can attend the JM concert at Red Rocks.

Reasons to be jealous of my life yesterday:

#1:  Baked Peach Cobbler Oats

  • Make oats
  • Top with a layer of peach jam
  • Follow by a layer of peaches
  • Followed by a sprinkling of sucanat (or brown sugar)
  • Pop in the oven for ~10 minutes

Jealous yet?

#2: Pesto Infused Quinoa

  • Cook up a double batch of quinoa (save half for tomorrow)
  • Mid-way through cooking pour out some of the quinoa water
  • Mix pesto with quinoa water to thin it out
  • Mix pesto, quinoa, and tomato chunks together

Beanie was almost drooling when I opened this container of food up in the car.  The pesto smell is to.die.for!

I ate this meal on the road to Red Rocks aka the BEST CONCERT VENUE EVER

Did you know you can do a 5K at Red Rocks and the finish involves running up these crazy stairs??

#3: The sheer beauty of Red Rocks

As usual Mayer Mania prevented me from remembering to actually take pictures of John on stage (we’re on a first name basis).

I DID capture a video of Slow Dancing in a Burning Room but for some reason I can’t hear the sound when I play it so I’ll refrain from posting it in case the sound never actually recorded 😦

We didn’t get home till 12:30 — Did John forget that my bedtime is 10:30?  So I CRASHED when I got home.  Oh and thank god they gave out granola bar samples form Cascadian Farms (organic to boot) or I would have starved on the way home!

#1 REASON NOT TO BE JEALOUS OF ME: Not only did I pick up a morning shift but I also have class all afternoon and was already scheduled to work after class today, grrr!  Cross your fingers that I make it through this 11 hours work/school day on ~5 hours sleep…

    Good luck!! I cannot function at ALL when I’m super tired. I’m sureee it was worth it though. Concerts at red rocks are always amazing!

    As the OTHER #1 John Mayer fan, color me officially jealous you saw him in the most amazing venue. Seriously. He puts on one of the best and most inspiring shows. It’s worth the sleep deprivation!
