WIAW: Smothered
Good morning from the land of no sun.
Colorado has been so gloomy the past couple of days and it’s making my attitude equally gray.
But gloom does make for excellent cookie baking weather so that’s precisely what I’ll be doing this afternoon with my mom.
So let’s get straight to the WIAW party so I can show you all the things I ate smothered in nut butter, sauce and chocolate galore! Thanks to Jenn of Peas and Crayons for hosting 🙂
Breakfast:
Nog and Nutmeg Pancakes smothered in Nog-Spiked Nut Butter Sauce.
How’s that caption for some enticement?
I can’t emphasize enough how much I love nog. Always have, always will.
These were so good. Don’t worry, I’ll share the recipe soon!
Lunch:
Fall Kale Salad + chickpeas.
Leftover sweet potato casserole.
Bread and buttah.
Dinner:
Smothered in homemade sauce.
Don’t even get me started on how I left our black beans in our new crockpot for 7 hours on Monday night and came home to find uncooked beans.
The enchiladas were delayed by a day, but they were good nonetheless and hey, I even made my own ranchero sauce!
Bedtime Snack:
Rice cake smothered in peanut butter and honey.
Except that’s a recycled picture and in reality it was chocolate chips instead of honey.
And then I had a glass of “real deal cow’s milk!” Can’t remember the last time I did that.

What’s your favorite smothered food?
Are you an eggnog fan?
ahhh!! how do you make your black beans in the slow cooker? the way they cook… not the come home to uncooked beans way. I want some of that home made sauce right now!!
I wish I could tell you!!! I read that you just put them in the slow cooker, cover them with 2 inches of water and cook on high for 6 hours, but that clearly did not work.
I LOVE EGGNOG! Get that recipe up, girl! I’ve got to try those pancakes. I’ve been thinking about trying to make my own nog lately…we’ll see if that actually happens!
If anyone can do it, it’s you!! I look up homemade eggnog recipes every year and then decide it sounds like too much work 😛
I looove the taste of egg nog! But I can’t drink it like I can drink a glass of milk. I like the sound of your Nog-Spiked-Nut-Butter Sauce 🙂 I’d probably eat it with a spoon though.
It’s so thick!! Half a glass does the trick for me. Otherwise I’ll cut it with regular milk so it’s not so overwhelming.
those pancakes look super delicious. now…if only i had the energy to make such a beautiful breakfast during the week!
I actually think pancakes are one of the faster breakfasts I make!
ugh, I just don’t like nog. I really want to. I force myself to try it every year and my taste buds have yet to transform. I’ll stick to my starbs peppermint mocha as my seasonal drink of choice 🙂
I know plently of people who hate eggnog. And the Sbux PM is delicious as well!
I have actually never had egg nog, but it seems to be calling my name every time I go to the grocery store.
I look forward to you posting the nog sauce recipes…maybe I will try that before nog by itself.
Yes, easing yourself into nog might be easier.
I would love to have you cook for me for a week. You always have such wonderful looking food 🙂
Such a compliment. Thanks, Helen 🙂
Smothered is one of my favorite adjectives when it comes to food 🙂
And love love love egg nog. It is seriously the best thing ever- pumpkin spice nog is even better
I keep meaning to buy the pumpkin spice! Next time, maybe!
I really don’t like egg nog 😦 I’m one of those people.
I like anything smothered in ketchup 🙂 haha. Almost anything.
I’ll forgive your dislike of eggnog as long as we can agree on how good ketchup is 😛
deal 😉
Oh wow!!! These look so good!
And I like eggnog! But it’s a new thing. Up until last year I wasn’t a fan.
The pancakes sound amazing…I can’t wait for the recipe!
