WIAW: Girls Day

August 31, 2011

Oh hey, you bunch of do-gooders 🙂

It’s that time of day week again.

 Peas and Crayons

And a Happy WIAW to you all.  After (repeat, after) you read this post you should probably over to Peas and Crayons and leave our hostess some love.  Try not to get hooked and spend hours reading other WIAW posts.

I’ve already expressed my love for Sunday, but did you know I love Tuesday just as much?  I know, Tuesday is kind of a random day to enjoy but for some reason my manager always schedules my day off for that day so I’ve come to love it.

I don’t however, love waking up early and running on Tuesday…

Pre-Run Fuel:

IMG_2591 Leftover half of a coconut cream Larabar.

But I busted out a fast run.  Like a 8:30 fourth mile.  Say what?!

That kind of speed hasn’t happened in months.

Breakfast:

IMG_2594 Peaches and Cream Oatmeal.

Topped with cinnamon swirl coffee cake, freezer jam, maple almond butter and good old classic peanut butter.

Served with an un-pictured mug of my favorite lemon ginger tea.

Tea and hot oatmeal?  I must be in the Fall mood already.  Even though it felt hot as hell yesterday.

After breakfast, some blog reading and cleaning, I dashed over to get a massage from my mom. <— Note my new page!

Secrets to injury-free half marathon training = stretching, yoga, rest and free massages 😛

My sister met up with us afterwards and the three girls headed out for lunch.

IMG_2598 Guess whose is whose.

I’ll give you a hint.  Those are chicken tacos and a chicken bowl.

IMG_2599 Vegetarian salad with pinto beans, fajita veggies, mild and corn salsa.

Chipotle love.

And two hours later I was a-starving.

I was also camping out at my parents office, playing with my mom’s iPhone while she slaved away at balancing her checkbook, and lucky for me my dad always has snacks on hand.

Afternoon Snack:

IMG_2600Rice cake, peanut butter and honey for the win!

Eaten in the car while I forced my sister to chauffeur me to the Nordstrom Rack sale.

IMG_2601 Tiny cup of water I stole from my parents’ office on the side.

I don’t want to talk about the sale.  It was less than satisfactory.

But I brushed it off, grabbed my mom and the girls headed to the Broomfield Farmers’ Market instead.

IMG_2603

I guess it wasn’t all girls…

IMG_2604 Snagged a handful of this guy’s kettle corn.

Tasty!

Then I finally let my mom and sister go and headed home.

And started on dinna.

Roasted tomatoes, peaches and onion, tossed in olive oil, salt, pepper, cinnamon and chili pepper.

Interesting, no?

Delicious, yes!

 Dinner:

IMG_2624 Pasta with Tomato-Peach Sauce.

I thought this was great!

I used basil instead of tarragon because, well, I had a huge bag of it.  Plus I have no idea what tarragon actually tastes like.  Basil is safe.

Loved.

We both went back for seconds 🙂

I’m off to tackle my daily to-do list.  Happy WIAW!

Tell me something about your day!  Best thing you ate.  What you did.  Where you went.  Whatever!

No fair! My day is just starting, really, so I didn’t get a chance to do anything amazing yet! I did have an amazing breakfast though… eggy bananafied oatmeal with almond butter and pudding. Yesssss I’ll never get tired of it 😀 And now I’m kind of stuck working (and slacking off ;)), but later I plan on meeting up with a friend for some coffee and maaaaybe cooking dinner for my family if I’m feeling up for it. Oh, and gotta get that workout in, too. Today’s is a full body strength training routine that will probably leave me crippled and unable to walk up stairs for a few days. Gulp.

Sounds like an interesting dinner to me! Yum. Great job with the run!

Free massages must be soooo nice. I’ve never even gotten one. (Well, aside from one of those massages at the mall where you lay in a big tunnel thing and it pounds you with water pressure. Do you know what I’m talking about? This was years ago.)
I haven’t done much yet today… just getting started. I do have a big to do list, though!

Totally know what you’re talking about! What were those called?! I’m off to look it up!

  5. August 31, 2011 11:35 AM

We had veggie pasta last night too … it was delicious!! 🙂

Random fact about Chipotle that I found out not too long ago. I read on their website that their pinto beans are cooked in a little bacon (black are not). You may not care, but just letting you know you in case because I know I used to eat “veggie” meals there with their pinto beans and I had no idea 😉

Hope your Wednesday is going wonderfully!

    • September 1, 2011 10:20 AM

I knew they weren’t veggie but I always wondered what made them that way! I wonder what they do with the actual bacon…

  6. August 31, 2011 11:49 AM

ahh all these peach recipes are getting to me! they both look so good!! and I do the exact same thing at chipotle.. load up on the salsas so I get more veggies!

Ditto! I get the corn and green and just ask for extra fajitas. MOAR VEGGIES NOM.

And yeah, Chipotle’s pinto beans are not vegetarian, but the black are.

      • September 1, 2011 10:18 AM

They usually just automatically give me the black if I ask for a vegetarian bowl/salad/tacos.

  7. August 31, 2011 2:36 PM

Hmmm, very interesting dinner! Looks delicious.

And uh…shoot. I still can’t guess with your hint.

    Tell me more?

  8. August 31, 2011 7:17 PM

Your eats look super yummy today. I so wish I could have some kettle corn! Oh and slightly jealous of the fabulous farmer’s market 🙂

    • September 1, 2011 10:17 AM

It was a pretty tiny one, but still cute and I got 3 bell pepper for $2, score!

  9. August 31, 2011 8:46 PM

Ahhhh I LOVE chipotle. Love it. Fresh ingredients, and I can actually get a decently healthy bowl!!

I don’t know how you just eat half a larabar! I scarf the whole thing down in seconds 😉

    • September 1, 2011 10:17 AM

I feel the same way about Chip! I only had half left! I like to conserve, ha ha.

  10. September 1, 2011 5:29 AM

    • September 1, 2011 10:15 AM
