Happy September 1st?

What?  Where did summer go?

I pointed out all the changing and falling leaves to Joey on our run this morning and it hit me that fall is most definitely approaching.  It is supposed to be 100 degrees today, however.  Which means I’m allowed to post one more summer peach recipe tomorrow, right?

Right.

Anyways, it being the first of September and all, today seemed like as good a day as any to break out the jar of organic pumpkin I’ve been hoarding in my pantry all summer.

This season’s first batch of pumpkin oatmeal:

Verdict: Every bit as good as I remembered/dreamed.

In the mix:

  • 1/2 cup rolled oats
  • 1 cup unsweetened almond milk
  • 1/2 cup water
  • 1/2 banana, whipped in
  • 1/4 cup organic pumpkin
  • 1 teaspoon Bailey’s (Oh, did you think I would stop using it just because summer is over? Wrong!  I just scaled back)
  • liberal sprinkling of cinnamon

I topped it with granola, peanut butta and a drizzle of maple.

Nothing says fall/September like maple syrup, cinnamon and pumpkin.

And then I floated away on a warm fuzzy cinnamon-y cloud.

It may end up being 100 degrees today, but that won’t stop me from eating more pumpkin.  I foresee a pumpkin variation of this smoothie in my future.

Are you a fan of pumpkin?  I’ll admit, I only ever used pumpkin for pie before I joined the blog world and even then it was pumpkin pie mix.

If you are a fan (and I have a good feeling most of you are…), is there one brand in particular you usually buy?  I know everyone is obsessed with Libby’s but I kinda think they all taste the same.  Libby’s is just cheaper! 🙂

    I seriously have no idea where summer went. Like, what?!

    All of the stores around here are out of pumpkin 😦 I don’t know why, but it makes me sad!

    Send some pumpkin over here! Those cans are basically extinct around these here parts! So sad. I lovee me some pumpkin.

    I cannot wait for fall! 😀

    I’ve been breaking into the pumpkin lately too! But in my defense, it actually IS really starting to feel like Fall here. Like, right now it’s only 62 and I’m kind of freezing. Nights and early mornings are especially chilly, which make hot oats and pumpkin dishes with warming spices extra pleasant 🙂

      Oooh, I’m jealous! It’s been hot hot hot here. But we’ll have snow by next month I’m sure. *Rolls eyes.*

    yum, this looks so good! Pumpkin oatmeal is the best. Pumpkin is one of my favorite things about fall, besides the cooler weather of course!

    I’m with you, I’m in total denial that it’s September. No idea how that happened. I’m actually not a big pumpkin fan…but I’ve only ever had it in pie and I much prefer sweet potato pie. I think I need to give pumpkin another chance though!

    I just purchased my first big can of pumpkin for the year….cracking it open in the a.m.!

    I buy libby’s because it is what is available to me. I can’t tell a difference either. But technically it isn’t Fall until the 21st….so bring on the peach recipe!

    I freakin love pumpkin…wish they served pumpkin pie for all major holidays, including Easter and Hanukkah.

    Definitely not too late for summer ingredients/recipes. But yes, time to break out the squash! I love pumpkin, but I don’t have a favorite brand, I usually just pick up what can find, and that’s usually limited to one choice at the grocery store–it’s oddly tricky to find around here.

    it’s hard for me to accept the fact that summer is almost gone.. but pumpkin is the only reason I actually CAN.

    Wow, this is great & so timely! I bought a can of pumpkin at Trader Joe’s and wasn’t sure what to use it for. This looks delicious, healthy and pretty quick – thanks for sharing!

    My favorite pumpkin comes from the Sugar pumpkins my sweet husband grows in our garden. They aren’t called “Sugar” because the gardener is so sweet (although he is) they are just small, round, and PERFECT for making pumpkin to use in all of your great recipes! Thanks for sharing this oatmeal and pumpkin. I plan to give it a try!
