WIAW & Happy Birthday, Mom!

First order of business.

A very Happy Birthday to my mom.


Thanks for all your love, support and cooking tips, Mom.  I love you!

And since it’s a birthday and all, it would make sense that today is also a party day.

Peas and Crayons




Oatmeal, chia seeds, Cascadian Farms Dark Chocolate Cherry granola, choco chips! and peanut butter.

Oh and maybe a splash of Bailey’s Irish Cream.



I was chilly all day yesterday.  Hot oats were in order.


Most unappealing picture of a sandwich ever.


Roasted red pepper hummus, pickle, mustard, tempeh and sprout samich.


And I was clearly too hungry to even bother taking a good picture, hence the background being my comforter. 

Errand-running treat:


Iced grande soy two-pump chai.

I know, you almost thought I went a Tuesday without Starbeez didn’t you?

Snack #1:


Almonds and banana chips.

I eat my almonds dry roasted and un-salted, which is weird considering how much I like my salt.

Joey came home a little before 6 and wanted to go look at paint colors for our new place (plus I needed to make a stop at the grocery for almond milk and wrapping paper!).  We couldn’t decide if we wanted to eat dinner early and run errands later or vice versa.  We opted for a late dinner so snack #2 was extremely necessary.


Food Should Taste Good Sweet Potato chips + more roasted red pepper hummus.

I snapped the quickest picture possible of this lady walking her cat before she noticed.  Who does that?!




Lots of roasted patty pan squash.


And the award for most adorable produce goes to!…



Eggplant Parm.

Which would have been much easier to make had our grill had any propane.  Oh well, I just used our grill pan.  It was POURING last night anyways so it wasn’t exactly ideal grilling conditions.


Sauteed kale + roasted patty pan.


Major plus: lots of leftovers!

Now, if you’ll excuse me, I’m off to breakfast and to deliver a birthday present 🙂

How do you like you almonds?  Raw?  Roasted?  Butterized?

Favorite snack? Anything involving hummus and/or almonds is fine by me.

    I always wanted to leash-train my cat. I’m diggin’ that woman’s pet-owning style. AND diggin’ your breakfast oats. PB, chocolate chips and baileys?? Forget the oatmeal, I just want a bowl of those three ingredients 😀

    A cat on a leash? Seriously?? That is the craziest thing I have seen in a while!

    Ha- my old neighbor walks his cat. It’s the big fluffy orange and white cat that he also lets outside during the day. The cat wears his/her harness all the time. I’m not sure what the point of walking it is if he just lets it outside… but he is kind of weird.

    aww! happy bday to your mom and WIAW to you 🙂 I have never had patty pan squash, love almonds any way or form and fave snack is any type of fruit or yogurt!

    Pretty sure that is now my new favorite breakfast. And boy am I glad I looked at this post bc that lady walking her cat is the best thing I’ve seen all day!

    I love raw almonds! I also love FSTG Sweet Potato Chips, they are so delish! Happy WIAW!

    Happy birthday to your Mom! And you know what’s weirder than walking a cat on a leash? Walking a rabbit on a leash… my neighbors used to do that… I didn’t even know rabbits needed to be walked O.o And I’ve never heard of patty pan squash, either, but it looks adorable 😀 As for almonds, I think I like them best as almond butter, although I do enjoy them in cookie dough balls as well ^^

      Ummm my sister and I used to have leashes for our rabbits…

      But to be fair we were really young. And to be honest, it was never any fun because rabbits don’t exactly go for walks.

    I’ve seen that squash before but I’ve never tried it. Does it taste similar to regular summer squash?! I’m not a huge fan of salt so for snacking, I love plain un-salted almonds…or Emerald’s cocoa roasted ones! They are so extremely addictive! Yum!

    LOVE that lunch girlie! Hummus and pickle sandwiches are one of my faves!

    Walking a cat?! That’s crazy! My cat would go berserk if I tried putting him on a leash! Haha

      I think it tastes just like regular summer squash but things taste better when they’re cute, right?
