After This Week
After this week I think I can safely say…
It is entirely possible to use an entire jar of MaraNatha almond butter in 4 days.
I’m okay with it as long as it means there’s overnight oats in a jar at the other end.
I never want to deal with fresh ginger ever again.
Ginger flavored tea, on the other hand…
I need to learn how to write a resume.
Where was that class in college??
I may never run more than 4 miles ever again.
Good thing the Bolder Boulder 10K is coming up next week…
Oh, and about that Half Marathon in my home town. Yeah, that’s not happening
My baking skills are kind of bad.
But I’m still proud of myself for “healthifying” these cupcakes.
Just don’t tell Joey I did so. He’d be so disappointed that I didn’t follow the “Smitten Kitten” recipe to a T. And don’t tell him it’s Smitten Kitchen, he’ll be disappointed about that too.
And really, they’re not bad and even if they were I wouldn’t mind as long I got some cake holes to add to my overnight oats.
I never want to see gray skies or rain again.
Please, Colorado. I need some sun.
I need to find a good book to entertain myself.
Endless episodes of Law and Order SVU just aren’t cutting it.
Most importantly, after this week I think it’s safe to say I conquered the egg salad monster.

Mayonnaise-less Egg Salade
Yes, I meant to put that “e” there.
- 4 egg whites + 2 egg yolks, hardboiled
- 1/4 cup cottage cheese
- 1 dill pickle, chopped
- salt, pepper, paprika, curry powder to taste
- 1.5 heaping tablespoons dijon mustard, if you’re in to that sort of thing and I am
*I tossed two of the yolks for those of us with cholesterol verging on high. I blame genetics.
Directions: Chop eggs and mix with remaining ingredients.
What deep and profound realizations did you make this week?

We had 4 beautiful days in Portland, but the rain is back today and is going to be here for at least a week. 😦 Last year, it rained all through June (31 days straight or something like that.) I might go insane if it happens again!
Oh god, I love the occasional rain storm but 31 days?? That’s just insanity!
Oh no…is something wrong that you won’t be running long again, or are you just not loving it anymore? Either way, hope everything’s okay.
We have been getting so. much. rain. lately. It’s ridiculous. And the worst part is that it will go from being gloriously sunny and warm one minute, to cloudy and downpouring five minutes later. Which just makes it frustrating when it comes to planning things and trying to get things done. Oh, and it totally gets your hopes up.
Aaand, fresh ginger? Yeah, I learned that one a while ago, too. Haven’t used it since 😛
The running thing is just all mental. Every time I go for a run I just really don’t see a reason to run past 3 or 4 miles and always feel like that’s far enough plus I have other things to do. Don’t worry, no injuries. But I’m contemplating doing 5 tomorrow so I at least know I won’t die during my 10K next Monday!
Yay! Don’t get mad, but I’m secretly kinda, maybe, sorta glad to hear that someone else can’t see the point of running past 4 miles 😉 I mean, I enjoy running and all, but after mile 3 I have a hard time willing myself to go on… so it’s refreshing to hear something other than “yeah so I just ran an easy 10 miles”. Err… what? 😯
And sometimes even 3 is a real struggle. Unless I’m training for some kind of longer distance, I don’t really see the point of doing more than 3 or 4. And really, 3 is more than enough for one day!
Awww….I’m bummed you won’t be running the Louisville Half! 😦 I was hoping I’d see you there! I’m doing the Bolder Boulder too, but I’m doing it with one of the kids I work with…so we’re going to be walking it mostly. No crazy racing for this lady….I feel ya on the long running thing though. I’m going to take a break from the long runs for a bit once I get done with the Louisville Half. I can sense that my body needs a break from it, and I imagine yours just isn’t feeling it either. And when you’re not feeling it, don’t force it, right? Better to just go with the flow, and do what feels good to you! 🙂
I know, I just waited too long and then when I went to register I realized I only had a month to train and I was going to be on vacation for two weekends in a row and it just didn’t seem like I would be prepared. I’m still contemplating the 5K though!
um, those cupcakes don’t look bad in the LEAST. in fact, they look mouth watering. 😉
