Productive Sunday

December 6, 2010

I’m not going to lie I was still dead tired when I woke up this morning but I had a full day of homework so I dragged myself out of bed.

Mostly because I was dreaming of oatmeal for breakfast.  Surprising, right?

I ran out of almond milk on Friday so Silk Nog oats it was!

1/4 cup + 1 cup water.

Topped with peanut butter, apple butter and Love Grown Foods granola — Raisin Almond Crunch to be precise.

I loved it!!  Not too sweet and the raisins were the perfect addition.

This bowl was just what I needed to fuel me through a longgg morning of writing.

At 1:30 I took a mini break for lunch and an accidental ten minute power nap.

Leftover vegan 3 bean chili + a carrot and hummus.  Oh and crumbles of goat cheese on the chili.

I wasn’t sure this was going to hold me over (those are my small bowls) but it was a lot more filling than I’d expected.

Joey went out to watch football and came home with my favorite Christmas movie!

And hung up our countdown.  Someone’s in the spirit 😀

At 5 snack inspiration struck.

I knew I’d find a use for my tiny jar.

Cashews on top of dried cranberries on top of 2 dried apricots.

We spent our evening at my friend Claire’s Hanukkah party (we go every year). Latkas, bagels & lox (minus the cream cheese), spanakopita and quiche were consumed but I was wondering where the veggies were 😛

Also had a bite of cheesecake and a Bailey’s filled chocolate, oh and I made Joey snag me a mini cookie-ish/muffin-ish treat that was seriously awesome tasting.

After watching a game of dreidel we headed home so we could crash into bed.  We saw this nicely lit house on the way home.

I sure was exhausted for someone who spent the entire day sitting in front of a computer and moving nothing but my fingers and occasionally my mouth.

Merry Monday!

I crave oatmeal all the time! Especially in winter. I’m thinking I should start making dessert oatmeal 😉

I know, I feel weird when I’m exhausted from sitting in front of the computer all day doing essay writing or what-not. Must be brain exhaustion 😛
