Abs, Arms, Oats

In lieu of my recent runner’s block and inspired by Caitlin, I’ve decided to do a sit up challenge AND a push up challenge.  I’m actually not all that concerned with being able to do 100 push ups or 200 sit ups but this will at least get me to do some arms and abs 3x a week.

In lieu of the snow (or dusting as it were) I pulled out a new box of tea.

It was appley with a kick of spice and it warmed me right up!

I guess I was in the apple mood!  Cooked 1/4 an organic honeycrisp in the micro for a minute and they came out nice and soft 🙂

Almost the same bowl as yesterday except I reduced the oats to 1/3 cup and reduced the liquid to 1/4 cup almond milk and 2/3 cup water and nixed the banana.

Topped with almond milk, Earth Balance, maple syrup, apples and cashews.

All mixed up.

For some reason this just wasn’t as good as yesterday 😦  I think it may have had something to do with the fact that it was cold by the time I was done topping and snapping photos so I microwaved them but then they were too hot so I stuck them in the freezer for a few minutes.  Oops!

I brought leftover chickpea bites for lunch, but this time they went in a pita.  I stuffed the pitas with hummus, tomatoes and spinach then wrapped them in tin foil and stuck the bites in a microwaveable container.

Come lunch time all I had to do was take my foiled up pitas out of the container and pop the bites in the microwave then add them to the pita.

Beanie was busy chowing down on a turkey burger and she obviously didn’t have a knife to cut it with.

The library staff lounge does not make for good pictures…

I may have also had dessert in the form of a pumpkin chocolate chip cookie and milk before dinner because sometimes dessert can’t wait.

It’s finally Friday!!

    I agree, sometimes dessert can’t wait. Especially that Godiva truffle that was on my coffee table last night…definitely appetizer-worthy haha.

    The tofu looks amazing!!! What did you marinate it in?

      Thanks Jen. It was marinated in 1T safflower oil, 1T honey, 1/2t paprika, 1/2t chili powder and a sprinkle of pepper. I microwaved it all for 30 seconds before I put the tofu in. Deelish!
