Drool-Worthy

Today’s eats were drool-worthy.

Pumpkin Moat Oats:

(Adapted from here)

  • 1/2 cup rolled oats
  • 1/3 cup almond milk
  • 3/4 cup water
  • 1/2 banana, broken into chunks
  • 1/2 cup pumpkin puree
  • 1/2T ground flax seeds
  • 1/2t vanilla
  • 1t pumpkin pie spice

Toppings:

  • 1T almond milk
  • 1T maple syrup
  • 1T cinnamon granola
  • cashews (these were an after thought but were awesome!)
  1. Mix oats, milk, water and banana chunks in a pot over medium heat.
  2. Once mixture begins to bubble, stir to break up banana then add pumpkin and flax.
  3. Turn down heat and cook 5 minutes.
  4. Turn off heat and add vanilla and pumpkin pie spice.
  5. Pour on toppings and devour.

All  mixed up.

How good is maple syrup?  It definitely made this bowl of oats.  Repeat tomorrow?  I think so!

Lunch was not drool-worthy and I fully intend on ignoring it entirely.

I came home to this.

Chickpea overload?  Maybe.  Drool-worthy?  Definitely.

I’ve been searching for a healthy pumpkin chocolate chip cookie recipe all week so when Teri’s recipe showed up in my google search I knew I’d found a winner!

I kid you not, just as I was pulling these out of the oven Joey came sprinting out of our room yelling “fresh cookies, fresh cookies!!”  No wonder I like him so much.

These were fluffy, cakey and delicious. 

I made them to bring into work so we controlled ourselves and split one.  I could have eaten 4 more.  But there’s always tomorrow.

Snow, really?

    I’m digging the chickpea bites. They just sound comforting. And ugh, snow. We’re expecting our first snowfall of the season this weekend…not cool.
