Toe-fu
Can I just tell you what an idiot I am?
In an attempt to jump over my couch to get to the bathroom (something I do on a daily basis) I jammed my toes into the hard back of the couch! It brought tears to my eyes it hurt so bad. I’m icing now but my toe is throbbing pretty hard. Looks like my run is out of the question for tomorrow.
I’m crossing my fingers that it’s nothing serious. I have a half marathon to run!
Up until then today (which by the time this post goes up will be tomorrow) had been a pretty good day.
Beanie and I hit up a new restaurant on The Hill called Thai Avenue. We both ordered the “Crystal Noodles.” Bean thread noodles with veggies.
Veggies, nom nom nom.
It was HOT today! But I enjoyed a leisurely walk back to my car instead of taking the bus back 🙂
Fast forward through homework and lifting and we find ourselves preparing some tofu for… gnocchi?
Everytime I press tofu I resist the urge to set the pieces up like dominos.
I used Mama Pea’s recipe, which can be found here (and I highly recommend you try it!)
Blend away.
Gnocchi making might seem a little labor intensive and slightly intimidating but it’s really pretty easy. You mix your food of choice be it tofu or potato with flour.
Refrigerate 15-30 minutes then divide into smaller sections to roll out.
Then cut into small “gnocchi-size” pieces and add them to a pot of boiling water.
The gnocchi will float to the top when they’re done. Remove them with a slotted spoon and let them drain for a few minutes.
Top with marinara or what have you and enjoy!
These were good. Joey responded by saying “Those are some damn gnocchi!” I’ll take that as a good thing 🙂
