Pumpkin Pancake Post

Seems like some of you were pretty excited about the tofu gnocchi.  And rightly so!

I even got a comment from Mama Pea herself.  When I get comments from the “big time bloggers” (in my opinion anyways) I get pretty excited myself.  It’s kind of like when I was ten and emailed Justin Timberlake and “he wrote back.”

Anyways I recently realized I’ve been using Libby’s pumpkin pie mix instead of the plain old canned pumpkin, oops.  Did anyone else notice this?

In celebration of buying a can of the real stuff and because it turns out not having to run in the morning gives me a lot of extra time I decided to take some time to make some breakfast pancakes, recipe and all.

Pumpkin Oatmeal Pancakes (Compliments of Chelsey — you can find her recipe here!)

Pancakes sound time consuming what with the batter making and all but in all honesty it’s pretty simple and quick.

After mixing up the batter it’s a simple as heating a pan, plopping in a few spoonfuls of batter letting it cook till you can flip ’em.

I topped my pumpky pancakes with 1/2 a mashed banana and a drizzle of maple, yummmm.

After my leisurely breakfast I knew the day was going to be busy — school to work to Rockies — so I made sure to pack something to eat at the game ahead of time.

Peanut Butter, Banana & Granola Sandwich

 Step 1.  Spread both pieces of bread with peanut butter

Step 2.  Rejoice about your dwindling peanut butter supply because it means OIAJ are in your near future!

Step 3.  Layer one slice with banana and the other with granola for some crunch.

 

Step…. what step am I on again?  Oh right, 4.  Slap your bread together, cut down the middle and have a sandwich photo shoot.

I took our gnocchi leftovers for lunch and don’t forget your fruits and veggies.

Today was a good day in the world of food, however my toe is still hurting so so bad and it’s bruised now 😦 

On a brighter note, Joey and I just bought plane tickets for a mini vaca to Texas.  Vacation, good.  Having to watch the Cowboys game, bad.  I’m mostly looking forward to going to Spiral Diner while we’re there.  It’s vegan and Joey even picked it out!  Everything looks SO good, I can hardly contain my excitement 🙂

    Not gonna lie..I really want those pumpkin pancakes…NOW!

    I have two weddings back to back in October…LA and Chicago..yipppee!

    I havent been to the market since the libby’s pumpkin cans have come out but its been popping up everywhere on blogs and its making me feel like skipping class, and jetting off to WF for it 🙂

    Ive been craving pancakes for days now too. I think it might be time to join my two cravings and make thesee! the recipe sounds superhealthy too and delish!

    Ive never thought of making a granola and pb sandwich!

    I hope ur toe gets better!

    No plans I’m currently “jazzed” about, but I am jazzed that you tried my pancakes! They are definitely hearty little guys, and keep me full forever!!!
