Run Recovery
The run must have worn Joey out
And apparently it’s bright in our apartment
Whole Foods provided some excellent run recovery fuel.
The Rockies are out of the playoffs but we smiled our way through the game anyways
Mom and Beanie invited me to try out a new restaurant with them called Leenie’s
Despite what this picture makes it look like I only ate two bites of my beignet because it was no where near as good as a real Cafe du Monde beignet!
I woke up with a sliightly sore throat so not only did I decide on soup for dinner but I decided on a butternut soup WITH ginger, which I hear is good for colds (or whatever is going on with my throat).
This Roasted Butternut Squash and Shallot Soup had rave reviews. It was pretty gingery but also pretty delicious. Especially paired with fresh french bread 🙂
Here’s to another warm week here in Colorado!
The soup looks so rich and delicious. I love this healthy recipe!
