Fill ‘er up!
Yesterday morning went so fast that I hardly remember shoveling large spoonfuls of oatmeal into my mouth between cooking lunch, taking pictures and unloading the dishwasher.
In short, yesterday morning was frantic, hectic and frustrating! I fueled up with a big GM before hitting the pavement for 5 miles.
In the mix:
- 1/2 banana
- 1.5 cups spinach
- 3/4 cup vanilla almond milk
- handful of ice
- AND… 1/4 cup pumpkin!!!
The pumpkin was really subtle but I could definitely taste that bit of warm spice 🙂
I was ready for a good run, but Mother Nature had other plans so she sent the wind out to get me 😦 It worked out perfectly that everytime I was running uphill I was running INTO the wind, ugh. It was such a struggle and I had to stop a few times within the last mile which is disappointing, but what can you do?
I felt a little better once I got home and saw my time and mile splits.
- Mile 1 – 9:32
- Mile 2 – 9:23
- Mile 3 – 9:04 <——– uphill
- Mile 4 – 8:50
- Mile 5 – 8:38 <——– uphill
Yikes, I guess I should be thanking the wind for making me push myself harder to make it up those hills!
The following hour consisted of me showering and getting ready for school, making and eating breakfast, chopping onions/green beans/tomatoes, cooking rice, washing the dishes, unloading the dishwasher, taking blog pictures, packing up my food for lunch and booking it out the door to make it to the bus on time!!! Did someone slip me speed?
An 8:38 mile is hardly impressive compared to my kitchen dash.
Breakfast was oats with banana, peach and granola. I did not have time to get fancy.
For lunch I decided to make Angela’s Quick & Spicy Veggie Chickpea Curry, which I wolfed down almost as fast as I wolfed down my oats. Maybe it was the fact that I was sitting outside with the sun against my back but I could definitely feel the heat in this one.
I split the meal in half so I’m eating the rest for lunch today but look how much just half was!
I promise there’s rice under there.
You better believe I ate every.last.bite.
The only change I made was to use some of my leftover sweet potato slices from last night instead of carrot (because I didn’t have any!).
In case you were wondering I also wolfed down a large amount of gnocchi and spaghetti for dinner. Do I sense a theme here?
This morning I wanted yet another smoothie. But this time I wanted the pumpkin to be much less subtle so I upped the ante and went from 1/4 cup to 1/2 cup. Minus the spinach because I wanted it to be orange instead of green 🙂
Pumpkin Pie Smoothie:
- 1/2 cup Libby’s pumpkin
- 1/2 cup vanilla almond milk
- 1/2 banana
- Dash vanilla, nutmeg and cinnamon
This smoothie was beyond good. And really easy to make! It tasted like Christmas 🙂
