Needless to say

Today was epic.

Today, being the first time I’ve ever had pumpkin oats.  And I was not disappointed.

I made my oats per usual but added 1/3 cup Libby’s canned pumpkin at the end and topped it with banana, cherry vanilla granola and Justin’s Hazlenut Butter.

Needless to say, these were FABULOUS!!!  I was hooked by the first bite.  This meal IS fall and I gladly welcome colder temps if it means getting to eat non-stop pumpkin oats!

However, I didn’t like pulling these out of my mouth!  What the heck are they?!

Dined with the little sister for lunch but her quinoa and black bean salad looked a lot better than my peanut butter and banana wrap

It started raining towards the end of lunch (boo!) but luckily our table umbrella (ella ella eh) was up.

Apple and hummus = delicious!

Wednesday = Lauren-in-a-rush Day!

I only had half an hour to get some kind of dinner together before rushing back to Boulder for work.  I’m amazed everytime I leave on time with the dishes washed!

Inspired by Beanie’s quinoa salad I decided to break up a leftover “cheese” stuffed bean burger over some lettuce.

I thought it sounded a little weird.  Joey thought it sounded weirder.  I ate it anyways and thought it was pretty darn good, but can you every really go wrong with quinoa?

I also chopped up some cilantro + evoo + lemon juice + apple cider vin for the dressing.

I also attempted to cook a sweet potato in half an hour, including the time it takes for the oven to preheat.

I microwaved the tater for 2 mintues to give it a head start then sliced it and threw it in the oven for 8 minutes on each side.  Covered in just a little olive oil + salt and pepper.

Needless to say, they were undercooked.  Needless to say, I ate them anyways.

Needless to say, eating dinner in the library is getting really old really fast.

    Hmmm…kernels of some sort..husks? I have no idea what came out of your mouth..last nights dinner? ;-P It looks like a chickpea shell.

    Pumpkin and sweet potatoes in one post is AWESOME!

    Those are from your oats. A few must not have been hulled properly. I get those every once in a while too!

    Your oats looked delish!
