Fruits and veggies galore
We tried something new for dinner last night — Layered Potato Bake
- 2 yukon potatoes, thinly sliced
- 3/4 bunch kale, torn up or chopped
- 1 container baby bellas, sliced
- 1 cup cheese (any kind, we used mozzarella)
- 1/2 onion, chopped
- 3 cloves garlic, chopped
- ~1T olive oil
Cook the onion and garlic in the olive oil for about 5 minutes over medium heat then spread over the bottom on a casserole dish. Cover in 1 layer each of potatoes, mushrooms, kale and cheese. Repeat twice more. Cover (we used foil) and bake for 50 minutes.
I wasn’t a fan 😦 I couldn’t pinpoint what I didn’t like about it but my tastbuds were not happy and I was unenthusiastic about it. Joey still had seconds, but I would’ve preferred something with a more exciting taste.
We washed it all down with some Sam Adams
It was some kind of cherry flavor that my mom gave to us. Tasted a liiitle like cough syrup but I downed it anyways.
After a disappointing dinner I decided breakfast would be a new start! I woke up eaaarly to get in a run before class. It was the first time I’d ran since the Bolder Boulder so I took it easy with a nice little 3-miler.
Since I had tons of extra time I decided to make steel-cut oats (I’ve never had time to make them in the morning and usually boil water and add the oats at night then let them soak so they only need about ten minutes to cook in the morning). I set the timer for 30 minutes but after about 20-25 they were super thick and I deemed them done!
Organic strawberries were 2-for-$4 yesterday so I obviously took advantage of the sale!
I got a little artsy with my oat design 🙂
1/3 cup steel cut oats
- 1 cup water
- 1/2 banana whisked in at the end
- topped with 1 big strawberry, a small handful or blueberries & a drizzle of vanilla almond milk
You can see the almond milk pooling up around the edges. The extra liquid was divine!
Part of lunch — turkey and cheese roll ups
I had to get creative. I usually bring a sandwich but we’re going to the Rockies game tonight and in an effort to avoid high priced bad quality ballpark food we’re bringing sandwiches. One sandwich a day is quite enough for me!
