A bagel a day…
Keeps the hunger away — more on this after this brief pictureless sidenote.
We packed up some sandwiches, fruit and crunchies for the Rockies game and believe me they were darn tasty, BUT of course I forgot my camera in the car. Alas, no pictures but here’s a little list of what was eaten:
- Justin’s Honey PB + 1/2 banana sandwich for me
- PB + honey for my honey — it was seriously oozing out of the bread!
- Fresh strawberries
- Snyder’s pretzel sticks
- Peanuts & Cheez-Its (eaten by Joey, of course)
I made sure to get some shots of breakfast, which started with this
Frosting? Nope — Cinnamon Yogurt!
- 4 oz. Oikos Greek Yogurt
- 1/2t cinnamon
- t vanilla
- 2t honey
And this is where it went
And oh man was it messy! But the taste was so worth the mess 🙂
I had a few bites of yogurt leftover so I mixed in slices of 1/4 banana, but where did the other 3/4 of the banana + the other half of the bagel go?…
- 3/4 banana
- t vanilla
- 1/2t cinnamon
- T PB
- 3T rolled oats
- ~T vanilla almond milk
I had a few problems with this one. The original recipe called for 3T almond milk, but I added this last and decided on 1T because it already seemed thin enough of a “batter.” You’re supposed to mash it all together and throw it in a greased skillet, then cook till you can flip it.
While it did start to brown on one side I found flipping to be impossible! It wouldn’t stay in one piece so I just mixed it around till it had browned to my liking, then put it on top 1/2 whole wheat bagel + T mixed berry compote.
I wish I had taken pictures while I was eating it for lunch — it was so thick! And very filling. Wish I could’ve eaten it closer to when I made it so the bagel still would’ve been crunchy instead of sliiightly soggy from sitting under the oats while I was in class this morning. I’ll definitely be making this again sometime!

It’s definitely not the easiest thing to flip. Funny about the liquid…I wonder if it depends how much you mash your banana? I usually plop it out of the bowl in one big pile, in the pan, wait about 3-4min then take a large, solid + flat metal spatula to flip it. But it definitely doesn’t stay together like a pancake or anything 🙂 I love the goopey mess! Love yogurt on bagels too!
I love the goop too! Very weird about the liquid and I’ve tried this before and swear I used 3T instead of one, hmmm
