Cold food on a hot day

After a much needed post-hike nap, we decided shish kabobs would be a tasty and simple dinner solution.  I got the idea from a Whole Foods recipe that had a mustard-lemon marinade. 

We had one boneless skinless chicken breast, 1/2 eggplant, 1 container button mushrooms, 1 red & 1 green bell pepper.  All brushed with the marinade/sauce and thrown on the grill.

This was my favorite part

Chopped up some strawberries + blueberries + a drizzle of honey, bundled it all up in some aluminum foil and threw that on the grill too.  DELICIOUS!!  I don’t even think it needed the honey, the fruit was sweet enough on it’s own.  If I had been home alone I probably would’ve slurped up the strawberry juices that were in the bottom of the foil ha ha!

As for today…

I bought my first container of chia seeds yesterday and was anxious to try something new…

VEGAN OVERNIGHT OATS.  Thought they would be perfect since it was so hot today and you serve them cold.  Before sitting down to watch Shakespeare in Love I popped TWO bowls of the oats in the fridge — love when Joey is willing to try my oat creations!!

1/3 cup rolled oats, 2/3 cup vanilla almond milk, 1/2 banana, 1 1/2 T chia seeds, dash vanilla, ~t cinnamon

Post-stir

Joey looked real skeptical upon seeing this, but was still willing to try.  I covered them in saran wrap and stuck ’em in the fridge.

They turned out just like they were supposed to — creamy, soft and sweet!  I melted a couple tablespoons of peanut butter and poured it on top of the oats.  Wow!  It hardened up instantly — like Magic Shell but creamier and wayyy better!!  Not sure if we loved the taste of cold oats but it was nice to try something new and they kept us cool as we sat outside and ate them.  I thought the cinnamon was a great addition — the flavor was a great addition.

My parents are in the final steps of selling the house I we’ve lived in for 19 years 😦  I stopped by one last time today so bid it a final farewell — heartwrenching 😦

 Not sure if I feel any better but I’m definitely full 🙂
