Did You Say Taco?

Well hello fellow Lauren Loves Good Food readers! I’ll introduce myself again since I believe Lauren has got a few more readers since the last time I guest posted. I’m Joey (the one on the right)So….I’ve been SUPER bored since my best friend and gf (the one on the left) has been gone. I have spent my time watching movies (5 movies to be exact), Season 4 of the Keifer Sutherland’s show 24 and doing a double-sided puzzle (yes, I said double-sided), so far it’s been tough.

Now on with the good stuff…

(Black) Bean Dip, I got this recipe from a friend of my grandma’s.

Recipe:

  • 1 Can Black Beans (Drained)
  • 1 Can Black-Eyed Peas (Drained) – I used Kidney
  • 1 Can White Beans (Drained) – I used Pinto
  • 1 Can Shoe Peg Corn (Drained) – I used Garbanzo
  • 1/2 Cup Chopped Red Onion (or as much as you would like)
  • 1/4 Cup Chopped Cilantro
  • 1 Tomato, Diced
  • 2 Avocados

Marinade:

  • 3/4 Cup Sugar
  • 1/2 Cup White Vinegar
  • 1/2 Cup Olive Oil
  • 2 T Tiger Sauce
  • S & P to Taste

All you do is add all of this together. I changed alot from the original recipe and it tasted exactly the same as the first time I had it. You can use any of your favorite beans and I know it’ll be delicious! One recommendation I have is after you left the marinade sit for a while you should drain at least half of it because everything will get oily.

Now on to the dinner part.

Spicy Chicken TACOS!!

Serving size (1 – 2)

  • about 3/4 lb of chicken
  • 1 Bell Pepper of your choice
  • 1/2 a medium white onion
  • 1 T Cumin
  • 1/2 Cup of Salsa
  • 1 Jalapeno

I figured it was only right to cook tacos a couple of days after Lauren was ragging on them, and oh man they were good! 

The marinade I used for the chicken had:

  • Lime
  • Water
  • Powdered Ancho Chili Pepper
  • Powdered Cayenne Pepper
  • Cinnamon
  • Dried Oregano
  • Dried Thyme
  • Sugar
  • EVOO

Marinate for a couple of hours and then throw them on the grill for 5-8 min on each side while brushing the leftover marinade when you flip the chicken over.  I shredded the Chicken after it was cooked through and added it to the fillings…saute the sliced onions, then add cumin, pepper & jalapeno after the pepper has become soft add in the salsa and chicken till warm. Fill the tacos and top with some avocado!

Oh the Places You Will Blog

Hi, friends. I’m blogging poolside right now via iPhone. I know, I’m so hip.

In all seriousness you shouldn’t be all that jealous of me. The iPhone isn’t mine and today has been the first time it’s been warm enough to sit by the pool. In fact, it poured yesterday. Whoever said it never rains in Arizona was seriously mistaken.

I’d live to chat but I have some sun soaking to do to make up for the past few days. Plus I’m still trying to convince someone to come to Pita Jungle with me…

My Beef with Tacos

I HATE TACOS.

Please, hear me out before you click out of this page and erase me from your Google Reader.

It’s not all tacos.  Just most.  Something about taco meat/seasoning just rubs me the wrong way.  I blame Taco Bell and their “30% beef” taco meat.  Shrimp tacos, veggie tacos, pancake tacos — these are all welcome in my life.

So what about taco salad, you ask?

LOVE.

And since I’m probably passing through Santa Fe and may be eating a taco salad as we speak I thought I’d share some homemade taco salad love with you all.

This taco salad has 0% beef and I’m okay with that.  Mashed beans with walnuts are better anyways.

In the mix:

  • salad greens
  • avocado
  • black beans + walnuts
  • carrots
  • bell peper
  • tomato

Oh and “croutons” aka socca crackers because I am obsessed and have made at least three different versions in the past three weeks.  In fact, a container of my most recent patch might be sitting right next to me as I write this…

Dressing = chopped tomato, apple cider vinegar, olive oil, chili powder and lime juice thrown in the food processor until it reached dressing consistency (which is like a total of 5 seconds, in case you were wondering).

Taco salad never tasted so fresh 🙂
