My Beef with Tacos
I HATE TACOS.
Please, hear me out before you click out of this page and erase me from your Google Reader.
It’s not all tacos. Just most. Something about taco meat/seasoning just rubs me the wrong way. I blame Taco Bell and their “30% beef” taco meat. Shrimp tacos, veggie tacos, pancake tacos — these are all welcome in my life.
So what about taco salad, you ask?
LOVE.
And since I’m probably passing through Santa Fe and may be eating a taco salad as we speak I thought I’d share some homemade taco salad love with you all.
This taco salad has 0% beef and I’m okay with that. Mashed beans with walnuts are better anyways.
In the mix:
- salad greens
- avocado
- black beans + walnuts
- carrots
- bell peper
- tomato
Oh and “croutons” aka socca crackers because I am obsessed and have made at least three different versions in the past three weeks. In fact, a container of my most recent patch might be sitting right next to me as I write this…
Dressing = chopped tomato, apple cider vinegar, olive oil, chili powder and lime juice thrown in the food processor until it reached dressing consistency (which is like a total of 5 seconds, in case you were wondering).
Taco salad never tasted so fresh 🙂

When I was a kid I HATED tacos! (…I also hated pizza. I guess I was just a weird wee one…) I can’t say I’d go crazy for them now, but made right I enjoy some spice every now and again. Your homemade taco salad looks wonderful!
I was so about to take you off my subscription!! Lol kidding!!! I actually did find out the other day that Taco Bell uses really cheap beef that they season a crap load. Ewww 😦
