Tofu Sandwich Version 2.0
Remember when I tried this sandwich?
And you all thought I was crazy? Well, maybe not all of you.
But I’d say a good majority.
Well, you’re about to think I’m even crazier.
The only thing better than BBQ-seasoned tofu on a PB & J is BBQ-seasoned tofu on a cashew butter and jelly sandwich. Oh yes, it’s true. I went there, and my life will never be the same.
Which reminds me I’m out of bread.
Does anyone else think cashew butter has the weirdest texture? When I squeezed it out I didn’t think it was going to spread easily, but surprisingly it did. Very weird.
My life would be incomplete without the spreader.
I’ve come to an important realization in my life.
Realization: Crunchy > creamy. Why did it take me 21 years to figure this out? I need me some crunch in my nut butter.
Even if that means having to be a little creative.
I hate my my bread has a hole!
When your sandwich is a little too high…

Lately, I’ve been packing these to bring to work for lunch.
And hoping no one notices me and asks what kind of sandwich I’m eating…
I’ve been yoga-ing, cleaning, moving, and pool-ing today and I think I’m ready for a much needed shower! Then off to a softball game.
Ain’t nothing like summer 🙂
So tell me, would you give this sandwich a try or do you just think I’m crazy?

Sometimes I Forget
Sometimes I forget how close I live to Denver and that I should take advantage of all the fun things the city has to offer.
Like the Chalk Art Festival.
Have you ever been to something like this? I thought it was way cool!

Allow me to explain what’s going on here.
The artist was distorting the drawing so that when you look at the reflection everything is the right size.

My brain can’t even comprehend how to go about doing that. So talented!
Sometimes I forget just how good banana bread muffins smell fresh out of the oven (at 11 PM) and that even banana muffins can be fancy.
Hello, apple and dates, join the banana muffin party, won’t you?
I used this recipe and they came out just lovely. Moist and not too sweet, plus apples, dates and bananas are just meant to go together, don’t you think?
The only modification I made was to lower the sugar from 1/2 cup to 3 tablespoons. With dates and bananas in the mix, I figured they were already going to be sweet enough. Oh and of course they only took 20 minutes to bake instead of 45 minutes, being muffins and all.
It was pretty late by the time these were done, but seriously, who can resist taste testing a fresh out of the oven muffin no matter what time it is. Joey, apparently, but not this girl!
Sometimes I forget how hot Colorado can get in the summer and that running in the middle of the day is sometimes out of the question.
Hello, indoor yoga/ab session. I had the oven on to roast some veggies, so it was basically like going to hot yoga, right?
Sometimes I forget that meals don’t have to be a labor-intensive, time-consuming, giant mess-making ordeal.
Last half of a tortilla with hummus, tomato and basil + salad with radishes and tomato-cilantro vinaigrette + celery drizzled in almond butter sauce and raisins.
My lunches change so much when I’m at home to make them. During the school year it was almost always leftovers from dinner the night before but now that I’m done with school, I’ve really been enjoying just throwing what ever is in the fridge together.
I don’t have to worry about whether it will pack well or whether it’ll keep me full for long enough to make it through the rest of the day. If I’m hungry again in an hour, I can just grab something else from the fridge.
Or from the muffin tin…

In a Perfect World
Whew, I feel like I’ve been missing from the blog world for so long, even though it was only one weekend. It feels so good to be back, friends.
So what have I been doing? Packing, shopping, moving, the usual. Oh, I didn’t mention I was moving? Our lease is up at the end of this week, so Joey and I are moving in with our friend Claire who lives close by. Even if you don’t have to go far, moving is still a pain in the ass.
Oh, and I’ve been thinking. Thinking about how I wish I lived in a perfect world.
In a perfect world, dogs would stay still long enough to photograph them.
Oh, Huni, you’re still cute even if you are blurry.
In a perfect world, I would make it to the Farmer’s Market before it started to close down.
I only made it out with radishes and a pound of pasta before market hours were over.
On the upside, the radishes were gorgeous and the pasta was so unique!
In a perfect world, I would be able to resist cute “for fun” shoes and stick to finding shoes for work.
I think we all know what really happened. Please excuse my toenails that are in great need of a pedicure – I’m getting one this week, I swear!
Don’t worry, I found work shoes too.
In a perfect world, basil wouldn’t cost an arm and a leg. Or I would have found some at the Farmer’s Market, but we already know how that turned out.
In a perfect world, I would feel special for having a Justin’s nut butter hook up and could get new flavors before they came out in stores.
Then I saw chocolate almond butter at Whole Foods. Turns out I didn’t have it before everyone else. But I can still feel special about getting free sample packets, right? Right.
And in a perfect world, I would be able to hold out and let my hook up, well, hook me up with maple almond butter, but when I see the word “maple,” my brain says “YOU NEED THIS NOW!”
In a perfect world, my computer wouldn’t have just stopped charging.
Seriously, technology just hates me. I think I know what I’m saving up for next.
In a perfect world, I would have the time to make my own granola bars to bring to work, my work schedule wouldn’t interfere with having to move, I would have made it to yoga at least once this week and the weekend would be longer.
But this isn’t a perfect world, this is the real world. And sometimes when you’re busy, it’s easier to buy than to make.
Sometimes, your computer breaks and you just have to deal with it.
Sometimes you have to do things you don’t want to. Watching SATC > packing, but sometimes it just has to be done.
Sometimes you’re busy and there’s not enough time to do everything you want to do, so sometimes you have to prioritize.
Sometimes I have to remind myself that homemade granola bars, cookies on my new baking mat, yoga, reading and pedicures will always be there when I have time to fit them in and there’s no need to stress myself out by trying to cram everything into a weekend, or a single day for that matter.
