Tofu Sandwich Version 2.0
Remember when I tried this sandwich?
And you all thought I was crazy? Well, maybe not all of you.
But I’d say a good majority.
Well, you’re about to think I’m even crazier.
The only thing better than BBQ-seasoned tofu on a PB & J is BBQ-seasoned tofu on a cashew butter and jelly sandwich. Oh yes, it’s true. I went there, and my life will never be the same.
Which reminds me I’m out of bread.
Does anyone else think cashew butter has the weirdest texture? When I squeezed it out I didn’t think it was going to spread easily, but surprisingly it did. Very weird.
My life would be incomplete without the spreader.
I’ve come to an important realization in my life.
Realization: Crunchy > creamy. Why did it take me 21 years to figure this out? I need me some crunch in my nut butter.
Even if that means having to be a little creative.
I hate my my bread has a hole!
When your sandwich is a little too high…

Lately, I’ve been packing these to bring to work for lunch.
And hoping no one notices me and asks what kind of sandwich I’m eating…
I’ve been yoga-ing, cleaning, moving, and pool-ing today and I think I’m ready for a much needed shower! Then off to a softball game.
Ain’t nothing like summer 🙂
So tell me, would you give this sandwich a try or do you just think I’m crazy?

i have been dyingggg to try this combo with cashew butter! I just think (okay, know 😛 ) that the mild creaminess would go so wonderfully with the BBQ. And I kind of love that I’ve found someone else almost as obsessed as I am. People don’t know what they’re missing 😛
Hey, simple answer for what you’re eating? “peanut butter and jelly.” there’s times when “bbq tofu sandwiched between cashew butter and blueberry jelly” is appropriate, and there’s times when it’s best to just go with “PB & J.” 😛

Haha Oh I’m loving all the crazy combo’s going around the blog world lately. I’m so, SO tempted to try the tofu, BBQ, and jam and I honestly can’t believe I haven’t yet. For someone who loves coming up with crazy combos, you’d think I’d be the first to jump at the newest craze. I’m ashamed of myself 😦
But I would def. probably give this a try. And I love how you added the crunchy nuts 😉 I’m all for playing with varying textures… makes things a lot more interesting.

Oh maaan, I think I love cashew butter even more than peanut butter (and I ADORE peanut butter)… this might just tempt me into the bbq tofu brigade. And for the record, crunchy is always better than creamy! That’s not even a question…

Yes you do! The texture can be really unappealing I think but if you cook it right, it can be delicious. Don’t be intimidated!
i’m afraid of tofu only slightly. i have cooked with it in banana bread though and lasagna for a vegan recipe!

Heck no you’re not crazy! I at times eat whay others will consider to be a weird combination. I have to tell you, try making homemade bbq sauce with jelly in it….amazing! Maybe that is why this combination is not so weird to me?
