Take the Time
Today, I hope you take the time to remember what happened on September 11, 2001.

More than that, I hope you take the time to remember the beautiful lives we lost and the way our nation pulled together to fight the devastation.

To me, September 11th means a day when our nation watched and listened to the news in horror and bewilderment.
A day that none of us will forget.
A day that was meant to destroy us, but instead brought us closer together and made us stronger.
I hope you take the time to reflect on what September 11th means to you.
Friday Fun Facts
Fact: It just took me so long to write the title of this post because my “I” key wasn’t working.
Fact: I just found a piece of millet under the “I” key. I blame Joey and his addiction to granola?…
Fact: The rain has finally let up and it is the perfect early fall day here in Colorado. This makes me genuinely happy. Or maybe it’s the massage I just got. Or, most likey, a combination of the two.
Fact: I miss my uncle.
I think know my mom does too.
Fact: My life is much happier with the addition of this device.
I looked at bottles of Pam (and the like) at the grocery the other day and kept wondering why I couldn’t find one that was just made of olive oil. I left empty-handed, went home and bought a Misto on Amazon. And now I’m a happy girl.
Fact: I should have bought this eggplant last week and the Farmers’ Market.
Fact: I cooked once this entire week. And by cooked, I mean I cut up a pre-made roll of polenta, topped it with some corn, beans, salsa and cheese and heated it in the oven for 15 minutes. And then I watched Jersey Shore. It was quite the classy night. And surprisingly delicious. Dinner I mean, although Pauly D is delicious too, if you ask me.
Fact: I don’t have time to cook, but I have time to go to Biker Jim’s. Twice.
Don’t judge.
Fact: Friday calls for spontaneous trips to Whole Foods. I didn’t need a Kombucha, but I wanted one.
Gingerberry for the win. I wanted Grape, but they only had Grape chia and as much as I like chia seeds, I don’t think I’d enjoy drinking them.
Fact: I saw this sign as I was walking into WF and was so excited! Only to realize I work that night. Bummer.
Fact: I only spent $6 at WF?! I didn’t even think that was possible. Probably because I was all set to splurge on my first jar of sunflower seed butter and they were out. Go figure.
Fact: Friday pancakes are still a weekly tradition around these parts.
Fall trees sparkling in the background = love.
Fact: Last night I looked in my WordPress spam folder and found lots of comments that were most certainly not spam! Sorry if you were one of those comment-ers.
Fact: I just ate the best peach ever.
Okay, it wasn’t this one, but you get the idea. Thanks for sharing, mom!
Fact: My half marathon is exactly one month from today!
Fact: I have to go tend to some tomatoes now.

Fitting that today would be “What I Ate (with my uncle) Wednesday because today happens to be his birthday and a party seemed to be in order.
Also, because I’m trying to enjoy the occasion (especially because he leaves today), I’m making this short and sweet.

Break-Fast:
Okay, so I actually didn’t eat breakfast with my uncle (this theme is off to a bad start already), but work with me here.
Topped with chocolate pudding, granola and peanut butter.
Luuuunch:
Plus 2 un-pictured mini slices of bread. Can I just say holla Challah is amazing??
Eaten in the car because my mom, uncle and I drove up to Brainard Lake.
Do you see what I see?
Cold, yes. Rainy, definitely. Beautiful, absolutely!
Dinna:
Vegan Dog at Biker Jim’s.
Topped with “harissa roasted cactus, Malaysian jam, scallions, cilantro and onions two ways.”
Awesome.
Side salad and charred tahini cauliflower.

And then I had a heart attack.
Not really, but seriously, that’s a bacon dog!

We ended the night at my home away from home.
Where is continued to be rainy and cold.
At least it was an exciting game. My boyfriend Tulo hit a homerun and it landed right next to us!
