Thankful
WIAW at Weird Times
Guys, it’s official.
I’m SO excited for Thanksgiving. I woke up hours before my alarm went off this morning and was ready to skip into the kitchen and start cooking for tomorrow, but I forced myself to go back to sleep for a little bit instead.
One thing’s for sure. It’s going to be one heck of a bake fest today!
And a busy one at that, so let’s get down to business. Happy WIAW!
Now I’m not one to have strict meal eating time rules, but honestly, having a noon to 8 PM shift and all the weird break times that go with it, is kind of frustrating. What meal am I supposed to be eating when I get my “lunch break” at 4 PM?!
All frustration aside, I guess sometimes you just have to make due.
Breakfast:
I love my mom and I love when we have breakfast together, but I just don’t love Mimi’s Cafe. My frittata was bland at best and I wish I had just eaten the whole pumpkin spice muffin instead.
Unfortunate.
Pre-work Snack:
And an unpictured Honeycrisp apple.
P.S. I just started Cutting for Stone and like it so far, although it’s definitely not a book you can zone out during.
Lunch:
Wilted kale and carrot salad topped with salt, pepper, balsamic and goat cheese.
Kale is the new spinach.
Leftover chickpea potpie with cornbread crust.
So good.
Dinner:
At 9 PM, grrrr.
Butternut Squash Mac and Cheeze.
Ummm, we love this recipe.
Especially when you mix in kale and peas and chickpeas.
Wait, you don’t mix beans into your pasta?
Dessert:
I was having a moment with the last chocolate chip oatmeal cookie and didn’t even think to take a picture.
And then I whined for the rest of the night about how I wanted another cookie.
P.S. Why do these cookies always turn out better when my mom makes them?! Thanks for sharing your batch, Mom 🙂
I’m off for a run, then it’s time to get busy in the kitchen!

5 Not So Serious Things to be Grateful For
1. Starbucks BOGO
The only thing better than one Caramel Brulee Latte is 2 Caramel Brulee Lattes for $4.
2. Pancakes
And eating said pancakes on a Saturday morning with Joey before the day gets all kinds of crazy busy.
3. Bagels
I had a “thing” for bagels when I was in high school. I think the employees at my favorite local bagel shop knew I was going to order a “plain on plain toasted” before I even got to the counter. And I was personally offended when I had to explain what that order meant to a not-so-experienced worker.
I brought 7 bagels home on Saturday, so Joey and I have some bagel work to do this week, and I’m a-okay with that.
4. My llama
Okay, it’s not my llama, per say, but every time I’m plodding along on a run and just want to be done already, this llama keeps me going.
Especially when it’s rolling around on the ground. If you’ve never seen a llama with it’s feet in the air, you’re really missing out.
5. Tea
I can’t keep track of how many cups I have a day. I just know all my boxes of tea are almost empty.
I realize a majority of these were food/drink related. I kinda like food.
Just be glad I didn’t post the picture of me holding my Caramel Brulee Latte. Right after I’d had a massage. And my hair was wild and oily.
And yes, I did look like that when I went into Starbucks. And saw two people I knew and hadn’t seen in years.
