All about Boulder
I really was planning on cooking dinner last night but it was getting late and pizza had been sounding SO good, so we walked over to The Village Tavern for a Friday night treat.
I got the Spinach Pizza with Feta and it fulfilled my every pizza craving (despite being a tad bit soggy towards the middle). Can’t wait to eat the left-overs 🙂
While Joey chowed down on the Four Cheese Burger + Fries
It must’ve been good because I didn’t have time to try any before he had inhaled the entire plate!
Tried my hardest to get my sister, who we call Beanie, to come over this morning for oats, but she’s VERY particular about her eggs in the morning and ultimately chose them over oats 😦 I’ll keep working on her! She did, however, take me up on my hike offer.
But first, breakfast…

Kept it simple–1/2 cup rolled oats made with 1/2 cup water + 1/2 cup almond milk (Silk brand, that I just bought this morning). I added in slices of 1/2 banana (unwhipped today) and topped with Cascadian Farm Organic Dark Chocolate Almond Granola + PB & J!

Then into Boulder to hike up the Chautauqua Trail

6 miles later and I was FAMISHED so we headed over to the Boulder Farmers Market to grab some lunch before it shut down at 2 o’clock. Apparently hunger makes me forgetful because I forgot my camera in the car 😦 Excuse this horrible camera phone picture taken under a red tent (not good for pictures)!
This was from the Mod Market tent–Wintergreen Salad (I think that was the name) = mixed greens, goat cheese, potatoes, apples and a honey vinaigrette. Goat cheese is so creamy and satisfying, yum. Joey indulged in yet another burger and Beanie decided on the corn tamales, which are also delicious!
Successful Saturday in Boulder!
“Needs more salt”
After jumping on the eliptical for the first time in a few months (trying to let the enormous blister on my foot from the Bolder Boulder heal by taking a break from running) I headed home to find a very hungry boyfriend.
“Beef, Cheese and Noodle Bake minus the Beef” – I have a beef with beef and after a 10-minute debate about whether to beef or not to beef I won.
Took some advice from The Edible Perspective and used shells instead of elbows which was Cooking Light’s suggestion and doesn’t it look 10x better than theirs?
I vote yes! Shells are awesome at providing a cubby for all that melty cheese mmmm 🙂 Joey made fun of me for saying “it needs more salt” and said I should’ve used that as the name of my blog. But really, it did need some salt! Delicious otherwise, and we had tons of leftovers, success!–Joey is always looking for leftovers to bring to work for lunch.
On to breakfast this morning!
Mom picked me up a new cereal to try–Peace Cereal–Vanilla Crunch to be exact. Loved seeing “organic” so many times in the ingredient list.
Loved the big flakes and giant granola clusters (whenever I eat Honey Bunches of Oats I waste 5 minutes digging through the box for the big bunches!). Added a few strawberries and some banana slices = peaceful perfection! Oats, you are delicious but sometimes a cold bowl of cereal really hits the spot. Used up the rest of my vanilla almond milk 😦 MUST GET MORE!
Dinner will have to fit in somewhere between work and the ever-stressful moving of couches from one house to another Can’t wait…
Hello fellow foodies!
Welcome to yet another blog about food, and good food at that.
Case in point, lunch! Sorry I have to skip over breakfast (a delicious bowl of rolled oats that I made with 1/4 cup vanilla almond milk and 1/4 of a ripe banana, topped with Honey Bunches Just Bunches, two strawberries and a tablespoon of mixed berry compote). There were no pictures taken because I opened Norlin Library at 7 am and scarfed them too fast to document.
Back to lunch… Very blue (sad) blue plate

Enter delicious fresh salad topped with fresh fruit (dressing = balsamic, apple cider vinegar, salt and pepper), slow & low potatoes, and an unusual dessert!
Yes, that is Greek yogurt topped with 1/4 of a red velvet cake donut (Mom, you are a bad influence for buying me this!)
The sweet potatoes took half an hour but were so worth the wait. Slice into 1/2″ wedges, brush with a little bit of Extra Virgin Olive Oil and salt, cook on 350 for 15 then on 400 for 15, turning half way through each 15-minutes baking interval.
Yummm (despite the yucky lighting, my kitchen bulbs are SO bright!)
