I followed the same schedule as yesterday morning — up at 7, 3-mile run, shower, breakfast, chillll

Yesterday’s breakfast was the inspiration for my oats today

Banana whipped oats, topped with Peace cereal, frozen strawbs/bluebs + drizzle of vanilla almond milk, yummmm

This breakfast + the return of the sun really had me jazzed.  I may have even done a little Gene Kelly Singing in the Rain imitation on a light pole on my way to the bus stop…

My good mood may also have had something to do with dinner last night

Super quick and simple, paired with a plain-looking salad

After dinner snack = Cinnamon Chip bread — cut like cake because it tastes like cake!

So delicious I had to make it part of lunch

Ignore the browning bananas, this creation was awesome!  Cinnamon, banana + PB = best flavors!!

Another Larabar — does that mean I enjoyed yesterday’s bar?  YES YES YES!  I’ve heard things about the texture being weird but I loved it.  Sugary and spicey and everything delicious.

New Discoveries

I learned a few things yesterday, including:

1. I apparently do not know how to cook a sunny-side-up egg

Lettuce, grilled eggplant, tomato paste + balsamic + apple cider vinegar, egg.  When I cut into the egg it was pretty cooked, not runny at all 😦 but still tasty 🙂

2. How to boil and shred a chicken

3. I’m a better cook than I thought!

It’s been super rainy ALL weekend, bleh 😦 so I was really craving a creamy soup for dinner.  Joey found a recipe for Potato Soup last week that I thought looked really good… with one exception…the potatoes!  I was not in the mood.  I was, however, in the mood for some corn (as always).  I used a mixture of this recipe AND this recipe and ended up with my own soup.

Here’s what I did exactly:

  • Cover 1 boneless skinless chicken breast with water in a pot and bring to a boil
  • Reduce heat a cook 10 minutes
  • While chicken is cooking slice 1/2 a green bell pepper and add to a second pot with 1/2 of a 12 oz bag of frozen corn (any kind)
  • Saute a few minutes then add 1T flour + 1/2 cup milk (I used 1%)
  • Let cook until the mixture thickens
  • Blend remaining corn with 1 cup milk and add to pot
  • Add 3/4 cup cheddar cheese
  • While waiting for the soup to heat up and the cheese to melt, remove chicken from water (I cut in into smaller pieces to make sure it was cooked all the way through, plus it made it easier to shred)
  • Using to forks, hold the chicken in place with one and the other to shred — it’s kind of a stab and pull towards you method
  • I didn’t end up using the whole chicken breast — just add as much as you want
  • Add chicken, season with salt and pepper and there you go!

I was so impressed with myself for cooking without a recipe in my hand and even more impressed that it turned out AWESOME!

I was craving CRUNCH this morning, so cereal it was!

With thawed frozen blueberries and strawberries and a few pieces of banana that wouldn’t fit on the PB & B samich I packed for lunch.

Perfect revival breakfast after my 3 mile run + good stretch with Joey, who’s training for a marathan (maybe a half).  I’m nowhere near ready for a marathon or even a half but his training guide says to do a 3 mile “easy” run on Mondays and Wednesdays so I agreed to come along for those 🙂

So so excited to try my first Larabar (they were on sale $1 each so I grabbed 3)!!!  I couldn’t believe the ingredient list: dates, almonds, pecans, ginger, cinnamon, cloves — that’s it???  It’s seems to good to be true, let’s hope it tastes just as awesome!

Last night’s Rockies game was MISERABLE!  Rain, rain and more rain plus we made the awful mistake of sitting in it for about 20 minutes so my jacket was soaked and never dried = ice cube Lauren 😦 yuck!  At least we won, right?

Anyways, due to weather conditions my sister (who came to the game with us) decided to just spend the night and the next morning SHE offered to make ME breakfast.  She made me her “usual” which also happens to be the same thing my dad eats every morning — eggs with tortillas and salsa.  Interesting fact #1 about my dad: he used to eat oats every morning (I didn’t know!) but he felt they made him sleepy and now he has eggs because protein gives him a jump start in the morning.

My first cup of Bhakti Chai — my dad goes through a jar a day!  It was a little too spiced up for my taste (even mixed with half a cup of water and a little coconut milk!) but it was growing on me by the time I had almost finished.

Simple and delicious.  It really hit the spot — oats didn’t sound good this morning, gasp!

After spending a few hours cuddling up with our beloved chihuahua and watching Lady Gaga videos I suggested that we go pick up some bread from the Great Harvest Bread Company.  I’ve been dying to go and their bakery happens to be down the street from my parent’s condo.

We both sampled the Cinnamon Chip bread and ended leaving with a loaf each.

It’s so doughy, soft and sweet!!  We toasted some slices up and ate them alongside a fruit salad I threw together.  My sister’s exact words: “And then I died and went to heaven!” Mmmm, I bet we have no trouble finishing this loaf 🙂  We were planning on making pizza later this week so when I saw pizza dough on the menu at Great Harvest I obviously bought some.

Perfect eats for a rainy day 😀  Off to see Ironman 2, followed by dinner!
