New Discoveries

I learned a few things yesterday, including:

1. I apparently do not know how to cook a sunny-side-up egg

Lettuce, grilled eggplant, tomato paste + balsamic + apple cider vinegar, egg.  When I cut into the egg it was pretty cooked, not runny at all 😦 but still tasty 🙂

2. How to boil and shred a chicken

3. I’m a better cook than I thought!

It’s been super rainy ALL weekend, bleh 😦 so I was really craving a creamy soup for dinner.  Joey found a recipe for Potato Soup last week that I thought looked really good… with one exception…the potatoes!  I was not in the mood.  I was, however, in the mood for some corn (as always).  I used a mixture of this recipe AND this recipe and ended up with my own soup.

Here’s what I did exactly:

  • Cover 1 boneless skinless chicken breast with water in a pot and bring to a boil
  • Reduce heat a cook 10 minutes
  • While chicken is cooking slice 1/2 a green bell pepper and add to a second pot with 1/2 of a 12 oz bag of frozen corn (any kind)
  • Saute a few minutes then add 1T flour + 1/2 cup milk (I used 1%)
  • Let cook until the mixture thickens
  • Blend remaining corn with 1 cup milk and add to pot
  • Add 3/4 cup cheddar cheese
  • While waiting for the soup to heat up and the cheese to melt, remove chicken from water (I cut in into smaller pieces to make sure it was cooked all the way through, plus it made it easier to shred)
  • Using to forks, hold the chicken in place with one and the other to shred — it’s kind of a stab and pull towards you method
  • I didn’t end up using the whole chicken breast — just add as much as you want
  • Add chicken, season with salt and pepper and there you go!

I was so impressed with myself for cooking without a recipe in my hand and even more impressed that it turned out AWESOME!

With thawed frozen blueberries and strawberries and a few pieces of banana that wouldn’t fit on the PB & B samich I packed for lunch.

Perfect revival breakfast after my 3 mile run + good stretch with Joey, who’s training for a marathan (maybe a half).  I’m nowhere near ready for a marathon or even a half but his training guide says to do a 3 mile “easy” run on Mondays and Wednesdays so I agreed to come along for those 🙂

So so excited to try my first Larabar (they were on sale $1 each so I grabbed 3)!!!  I couldn’t believe the ingredient list: dates, almonds, pecans, ginger, cinnamon, cloves — that’s it???  It’s seems to good to be true, let’s hope it tastes just as awesome!
