I feel like an old lady!
DEFINITELY did too many lunges yesterday and totally paid for it on my 3-mile run! Thank goodness it’s only week 1 of training and I don’t have any particularly difficult runs to get through.
Last nights dinner seemed sparse but it was actually pretty filling…Shrimp Tacos!
I would be lost without this nifty tool for cutting cilanto, parsley, basil, etc. It actually belongs to my mom but I’ve been coveting it for about a year without her noticing…shhhh

The only complaint I had about these (besides wishing we had more of the filling) was that we used flour tortillas instead of corn which is what the recipe called for. We have SO many flour tortillas, we just couldn’t justify buying corn 😦
Do these babies look fresh or what? Believe me they TASTED fresh. If Mexican restaurants tasted this fresh I might like them a little more…
I was already feeling super sore by the end of the night 😦 but managed to get through my run with Joey at my side. The image of a creamy bowl of oats definitely got me through that last mile (and I even ended with a sprint) and when I burst into the apartment I found… no electricity. And with no electricity there shall be no oats. Lucky for me the power came on around 8:30 and stayed on just long enough to whip up a quick bowl of oats 🙂

I cooked the oats in a half cup water/half cup vanilla hemp milk and was sadly disappointed by the hemp flavor/smell. I don’t know how to describe it but it was not an enjoyable fragrance. I’ll be sticking to vanilla almond milk from now on (although I still wanna try oat milk).
IMPORTANT: YOU MUST TRY THESE GRAHAM CRACKERS!!!!! They were PHENOMENAL in my oats. They soak up the liquid in the oats and get nice and soft, plus the taste is AWESOME — just the right amount of sweet and cinammony. I’m getting hungry just thinking about them, droooolllllll
After coming to terms with not being able to blow dry or straighten my hair, I tossed together a lunch with VEGGIES — so good to have extras on hand again 🙂 Let’s hope the electricity came back on soon after I left so the veggies don’t get hot in the fridge…

Romaine + yellow bell pepp + carrot + roasted red pepper hummus AND roasted garlic hummus — I’m on SUCH a hummus kick lately, can you tell?
Funny Story Time: I got an invite from my friend Claire to meet her for dinner tonight and when I asked Joey if he could fend for himself for a night he exclaimed “YES, I’M GONNA EAT A STEAK!!!!” Gee, is he insinuating that I deprive him of meat? Okay, maybe I do…
Wish me luck on finalizing/perfecting a recipe for Banana Bread Pudding Coffee Cake I found a few minutes ago!
A few of my favorite things
Like quiet morning runs (that last longer than I planned on) and eating and baking.
Morning run fuel = 1/2 banana + smear of PB
I planned on doing 4, but was feeling really good and went 5
- Mile 1 – 9:35
- Mile 2 – 9:21
- Mile 3 – 9:47
- Mile 4 – 10:00 due to HUGE unexpected hill
- Mile 5 – 9:25
- Total time = 48:13 — not too shabby!
Breakfast = VOOs + PB BSS + Nibs. Whoa, acronym overload? VOO = Vegan Overnight Oats, BSS = Banana Soft Serve. I’m beginning to think this blog needs a separate tab for acronyms, no?
I expected the cocoa nibs to be bitter, but they were surprisingly pleasant tasting and added the perfect crunch to my oats 🙂
Spending too much at the grocery store really works up a girl’s appetite . I was more than ready for lunch!

That’s Noosa Honey Yoghurt on toasted bread with cocoa nibs. Yeah, it was a little weird…
And I got to try out my new peach jam — it was pure bliss, can’t wait to try it on a samich!
More shot glass hummus + apple . I LOVE apple and hummus together 🙂 After I had refueled I was ready to take on Ashley’s Vegan Graham Crackers. I’ve been wanting to make these for WEEKS, but I didn’t have 5 important ingredients and they all seemed to be expensive so I’ve been buying a couple a week and FINALLY had everything!

Ta da!! They take 14 minutes to cook and I was done cleaning up with 7 minutes to spare! It smells DELICIOUS in this apartment 🙂
And now on to a few more of my favorite things, like snacking on grahams and lounging on the couch and watching a movie 😀
Half marathon race training begins tomorrow!!! SO SO EXCITED

Bar Food
Is there something odd about this lunch?
Besides the fact that it involves hummus and no veggies (groan, we are completely out!!), how about the fact that it involves glasses typically used to contain alcoholic beverages, yet no alcohol?
I knew there was a better use for shot glasses
Like for hummus sampling — left to right: roasted garlic, roasted red pepper & traditional
Plus smoothie in Pilsner glass
4 strawberries, 1 kiwi, ice, 1/2 cup almond milk, 1/4 banana, splash of vanilla, blend, pour, consume
So refreshing on a 90 degree day 😀
This morning’s breakfast also featured organic strawberries, which have reappeared in my life after being on a two-week hiatus due to outrageous prices!
Strawbs + 1/2 banana + almost a cup of plain Greek yogurt + handful of almonds and a good glob of honey, so refreshing
I used to eat this at least once a week, but it fell by the wayside once I discovered oats. Now that the summer heat is in full swing, it’s time to return to these cold refreshing breakfast options — although I could never give up oats, no matter the temp! Speaking of temp, doesn’t it seem a little contradictory to be drinking a hot tea?
Well yes, but my throat was feeling awfully stratchy/dry so reinforcements in the form of Country Peach Tea were sent it.
Sidenote: I encountered a yogurt I disliked yesterday! This NEVER happens. Stonyfield Chocolate Underground
This yogurt is not my friend. But it’s chocolate! I know, I know, but I’ve discovered I’m very picky about my chocolate. In fact, up until high school I didn’t even like chocolate, gasp! The vanilla layer had a vanilla pudding taste/texture but the so-called “Chocolate Underground” was highly UN-tasty!
And speaking of un-tasty, let’s launch right into last night’s epic dinner fail 😦
You have NO idea how excited I was to try Angela’s Vegan Mac and “Cheese” ALL WEEK! So of course, I botched it.
I misunderstood the directions, assuming the water listed under ingredients was meant to cook the noodles in when really it was part of the sauce. Simple mistake, which resulted in extremely NON-creamy mac and “cheese” ugh!
If you want to see how good it was SUPPOSED to look, check out Angela’s pictures! On top of my failure to follow instructions, I attempted to add steamed broccoli. This broccoli HAD to have been rotten. It tasted like a mixture of garlic and earwax — GAGGGG! I’m not discouraged enough to not give it another try though!
After “dinner,” Joey helped me set up my training guide for the Half Marathon. The guide I found online is 12-weeks long but I have a total of 16 available weeks before the race plus I’ll be on vacation twice at the end of July/beginning of August so I wanted to stretch out the guide to account for all of those things. If I figure out how I’ll post the calendar I made. I’m getting really excited/nervous to start next week!
One last thing:
Lunch today made me think back on some of the ways I’ve changed my eating habits/nutrition is the past few months. I ate a couple hours before class, so by the time I was done at 12:35 I was STARVING. Normally, I would burst into the apartment and stuff my face with whatever was fastest, which meant risking eating something unhealthy. Today, however, I took the drive home to think over what I had available to eat at home/what would be filling & cooling without being too heavy. When I got home it only took a few mintues to whip up everything I had gone over in my mind and I felt satisfied and happy after I had eaten it. Planning goes A LONG WAY!
