Running Low
On energy today! Because it worked better for Joey to do his 3-mile run today instead of tomorrow, we both decided to switch our Monday and Tuesday training schedules. I don’t know why, but this 3-miler KILLED me today 😦 Well, the last mile did anyways. I think it was a mixture of hunger and the fact that we ran all 3 miles in 9 minutes or under! Whew, that’s faster than usual but I was just running at what was comfortable. I may have even told Joey to “KEEP UP!!” And I thought he was the fast one 🙂
Oats for two were in order
I mixed in a handful of blueberries in the last 2 minutes of cooking then topped with ~10 cherries per bowl + a graham and PB samich and a sprinkle of sucanat.
DIVINE
I have a few things I’d like to get done today but I’m thinking a day of R & R would be much better 🙂 It’s been a SUPER busy weekend and this week should be busy to, what with my birthday and all so I think my body deserves a rest!
As it turned out, the 4th of July 2010 turned out to be slightly disappointing, yet again…
Grilled Vegetable and Mozzarella Sandwiches were made and packed up. We planned on eating them picnic-style with a fruit salad while we waited for the fireworks show to start, but the rain intervened and we ended up eating them in Bobby’s car.
Oooh, baby were they delicious!
Who needs meat on a sandwich anyways? Not me!
The rain went from a heavy downpour to a slight drizzle, allowing the fireworks to start (even though it wasn’t quite dark yet). Claire and I peeked out from the back of the car
And giggled at the GIANT sparkler Bobby had bought. Too bad we didn’t get to use it 😦
It started dumping rain as soon as the finale started. The poor boys had been standing outside the car and got a little wet. Bobby and Claire thankfully offered to drop us back off at our car.
We ended the night with hot tea, oatmeal raisin cookies and Transformers 2

NOTE: I am NOT a Dallas Cowboys fan! I’m wearing Joey’s sweatshirt. It’s his favorite team and he’s even a season ticket holder. I, on the other hand, don’t even watch football and always root against the Cowboys just to annoy Joey 😛
Last week I saw at least 3 blog entries that displayed tempeh sandwiches for lunch (here, here and here) so today I had to try it!
Organic Five Grain on Cinnamon Raisin Swirl with a small smear of goat cheese. Sounds interesting…
Tasted pretty good! I’m still getting used to the taste of plain tempeh but the bread and cheese went pretty well together.
Plus some organic strawbs, of course.
Now for a little Ferris Bueller’s Day Off action. The intro at the beginning of the movie argued that FBDO is John Hughes’ best movie. I honestly can’t pick a favorite! Pretty in Pink, Home Alone, The Breakfast Club, Sixteen Candles, wow! What’s your favorite John Hughes movie?

Greetings from America the beautiful! In honor of the holiday (and in accordance with training) I ran 4 miles on the 4th
- Mile 1 – 9:22
- Mile 2 – 9:07
- Mile 3 – 9:06 (and I felt like I was going so slow during this mile!!!!)
- Mile 4 – 9:17
- Total = 36:52
After returning home I promptly made up a bowl of patriotic cereal
Vanilla Crunch Peace Cereal complete with banana slices, cherries, almond milk and mini US flag for fun!
Mmm, cherries provide the perfect vessel for almond milk and they tasted delicious!
I know I’ve been neglecting the blog world all weekend but here are a few more foodie highlights:
First ever black bean burger experience was a success!
We used a combo of Kath’s recipe and Angela’s recipe. Ours had beans, flour, s & p and BBQ sauce and we topped with slices of tomato and mashed avocado. I wish we woulda had some pickles. A nice crunch woulda been perrrfect.
Paired with my favorite summer food, corn.
This recipe will definitely become a staple for us 🙂
Saturday involved another trip to the Boulder Farmer’s Market for…
GARLIC SCAPES!!!! 10 for $2?? I didn’t know such low prices existed at the FM, but I’m glad they did! After getting the scapes I suggested we take a walk to the Great Harvest Bread Co. in Boulder. It ended up being a long hot walk and it took forrrreverr to find. Turns out we had walked right past it but didn’t notice!
Ta-da! Cinnamon Raisin Swirl. Check out how loaded with cinnamon this loaf is. It had literally JUST come out of the oven when I bought it and smelled out of this world!
I whipped up a GM built for two because I finally got Joey to give in and try one, yay!
Another swampy one — same as Friday. Verdict: “Tastes like this protein shake I used to drink in high school.” Not sure if that’s good or bad…
GM was drank drunk (thanks, Mom) alongside this plate of kiwi and bread and OH.MY.GOD. this bread is HEAVEN! We will have no trouble finishing this up.
Friday, Saturday and today included lots of Rockies game attendances

And now we’re off to yet another fireworks show — if it stops raining that is. Why does it always rain on the 4th in Colorado??

Count ’em 1-2-3
Wow, was I on a course-kick yesterday or what? As you may remember my lunch yesterday consisted of 3 courses and it turned out my dinner did too. This was totally un-planned, as we joined my family for dinner at their humble adode for a mom-prepared meal.
Course #1 = Gazpacho. Why you ask? Well at the Farmer’s Market a few weeks ago there was a tent selling this particular chilled soup and Joey innocently asked, “What’s gahzzpatchoo?” Clearly he’d never heard of or tasted gazpacho before and my mom felt that this was a problem that needed fixing. Sidenote: I’m not a fan of gazpacho. I feel like I’m eating a bowl of salsa, but for you, Mom, I’ll try anything 🙂

Mmm, I know this was a Cooking Light recipe but I need to find it because that dressing was great! It had a spicy kick that was just perfect.

I have NO idea what sterno is made of but it’s BRIGHT purple and makes a pretty cool flame!


Oh yes, we did have fondue!! And vegan fondue to boot!
The banana was definitely my favorite, but for the most part I think I ate more plain fruit than chocolate-dipped. Result: I felt satisfied afterwards, whereas everyone else was complaining about how full they felt! I was even feeling a little hungry by the time I got into bed so I made sure to have a snack before my 3-miler this morning — half banana + smear of PB per usual.
Recap: Yesterday I had the choice of cross training, i.e. walking, biking, swimming or doing a 2-mile run. I chose the 2-mile and went outside around 5 to do it. It was AWFUL. So so so hot, even at 5 and short distances are so much harder for me to run lately. Anyways I got it over with. Today’s 3-mile felt rough too, but Joey pointed out that I totally book it when I’m going uphill. Good for me! 🙂
I’ve been neglecting my steel-cut oats lately so it was time to whip up a batch for breakfast.
+cherries and grahams (which have been making bi-daily appearances lately he he). Someone please tell me how to de-seed cherries!!! I actually swalled a pit on accident today! Oh and I sprinkled some sucanat on top. It gets all melty and deeelicious!
Lunch included this salad with romaine, orange bell pepp, apple and 2 hummuses

Just Bunches for some crunch action! Also brought some ORGANIC strawberries. I scolded my mom for buying non-organic yesterday!
And that concludes today’s edition of What Did Lauren Eat. Now I know I promised to continue my lecture discussion on MY idea of health, BUT I think this post is long enough as is and I just finished my last day of summer class so I think my flightiness can be excused! I promise to finish the post tomorrow when I have THE ENTIRE DAY OFF!!!!!!!! I’m a little excited, can you tell?
