Happy 4th of July!

Greetings from America the beautiful!  In honor of the holiday (and in accordance with training) I ran 4 miles on the 4th

  • Mile 1 – 9:22
  • Mile 2 – 9:07
  • Mile 3 – 9:06 (and I felt like I was going so slow during this mile!!!!)
  • Mile 4 – 9:17
  • Total = 36:52

After returning home I promptly made up a bowl of patriotic cereal

Vanilla Crunch Peace Cereal complete with banana slices, cherries, almond milk and mini US flag for fun!

Mmm, cherries provide the perfect vessel for almond milk and they tasted delicious!

I know I’ve been neglecting the blog world all weekend but here are a few more foodie highlights:

First ever black bean burger experience was a success!  We used a combo of Kath’s recipe and Angela’s recipe.  Ours had beans, flour, s & p and BBQ sauce and we topped with slices of tomato and mashed avocado.  I wish we woulda had some pickles.  A nice crunch woulda been perrrfect.  Paired with my favorite summer food, corn.  This recipe will definitely become a staple for us 🙂 

Saturday involved another trip to the Boulder Farmer’s Market for…GARLIC SCAPES!!!!  10 for $2??  I didn’t know such low prices existed at the FM, but I’m glad they did!  After getting the scapes I suggested we take a walk to the Great Harvest Bread Co. in Boulder.  It ended up being a long hot walk and it took forrrreverr to find.  Turns out we had walked right past it but didn’t notice!  Ta-da!  Cinnamon Raisin Swirl.  Check out how loaded with cinnamon this loaf is.  It had literally JUST come out of the oven when I bought it and smelled out of this world!  I whipped up a GM built for two because I finally got Joey to give in and try one, yay!

Another swampy one — same as Friday.  Verdict: “Tastes like this protein shake I used to drink in high school.”  Not sure if that’s good or bad…GM was drank drunk (thanks, Mom) alongside this plate of kiwi and bread and OH.MY.GOD. this bread is HEAVEN!  We will have no trouble finishing this up.

Friday, Saturday and today included lots of Rockies game attendancesInlcuding one fireworks show that I was unable to photograph successfully 😦

And now we’re off to yet another fireworks show — if it stops raining that is.  Why does it always rain on the 4th in Colorado??

    I am in Utah and it was freeeezing on the 4th..like 50 ish degrees..yeah I had a coat on..totally sucked. I am not sure what is worse 100+ degree weather of 50.
