Eating, running, expo-ing?
I’ve been doing all of these things to gear up for my race TOMORROW!!! I’m a little excited. Just a little.
I went on my last run before the race and it felt glorious. Do you ever have one of those runs where you feel like your legs aren’t actually doing any work, but instead you’re just floating over the ground? That was how I felt. I take this to be a good sign 🙂
It’s been record highs here in Colorado so I’ve been digging into copious amounts of overnight oats of the pumpkin variety to keep me cool.
Layered with banana soft serve and topped with granola and a blob of Justin’s Choco Hazlenut. Nothing better 🙂
So good that I had to repeat it on Saturday morning.
I switched it up with a different granola and a different nut butter and I mixed some blackstrap molasses in with my banana soft serve but that was a mistake. I’ve decided molasses is not a taste that I enjoy. Reminds me of hard alcohol and that’s not something I want in my breakfast, yuck!
At least the other flavors balanced out the alcohol molasses.
In other news, I finished off the last eggplant burger and was all too sad to see it go 😦
This apple tasted like dirt. I refuse to buy non-organic ever again.
In lieu of the upcoming race I’ve been loading up on carbs. Yes, I love carbs and yes I love having an excuse to eat them in excess.

Joey and I attended the race expo on Friday night and it was quite the experience. Booths and free samples galore, plus mothers encouraging their toddlers to take in mass quantities of energy bites, which I’m sure made for a fun night…
We came home with bibs, goodies, t-shirts and more flyers than I’d ever like to see. Oh and I bought a bondiband, which Joey modeled when we got home.
Nice. And now it smells like a boyfriend in need of a shower… even nicer…
I’m devoted to finishing this paper before dinner at Carrabba’s tonight (told you I was already planning to go back) so I can RE-lax tomorrow and by relax I mean do the following:
- Run 13.1 miles
- Eat breakfast at Snooze (Pineapple Upside Down Pancake, anyone?)
- Grocery shop
- Make bagels
- Trip to the pumpkin patch!!
Yes, I consider all of this to be both fun and relaxing, even the grocery shopping. We’ll see how much I get crossed off that list…

Flash to the Past
Oh hello! Sorry to have deserted you yesterday. My 4000 level English paper may be the death of me. I worked on it for hours and came up with one measley paragraph and absolutely no idea where I was going with my idea…
Such is my life.
Let’s return to happier times in the past, shall we?
Wednesday and Thursday breakfasts, respectively.
Is your mouth watering yet? I know mine is.
How about some afternoon eats?
This is what happiness looks like on a Wednesday afternoon.
Thursday afternoon featured a delicious and slightly sweet salad. I added honey to my usual balsamic, mustard, olive oil, salt and pepper dressing. Then I added some chai flavored almonds and red onion to my spinach.
Honey, almonds and red onion are awesome flavors together 🙂
Plus half of a honeycrisp. I’ve decided these apples freak me out and that they’re probably so big because they’re some genetic mutation gone awry. But they sure are tasty with vanilla cinnamon peanut butter 🙂
I realized I don’t give Joey enough credit. He made Mama Pea’s Vegan Eggplant Burgers (and let me make it clear that he chose this recipe!) for himself on Wed and I got to have the leftovers on Thurs. Perfect dinner solution since he is home Wed and I am home Thurs.
These were awesome!!! And he even took pictures. I’m beaming with pride ha ha
I should let Joey cook more often 🙂
By the way, apparently I’ve used up all my picture space. Do I HAVE to buy more?? Anyone know what to do?

Rainy Day Run
I was soaked after my run this morning and no not because I was sweaty. Because it was a drizzly morning and I refused to let a little rain ruin my run. The giant puddle I splashed through on accident almost made me turn around but I said “No, Mother Nature you are not ruining this for me. You and your wind and rain can bite me!” And I kept on going.
I tried to take a picture of myself but all I got in the picture was my legs and it looked more like I peed my pants than conquered 4 miles in the rain…
Run was followed by a hot shower, hot oats and a few sips of hot tea before I had to run out the door.
I assure you those few sips were wonderful.
But it was nothing compared to this bowl of oats. A dash of salt in oats in genius I tell you, pure genius.
In the mix:
- 1/2 cup rolled oats
- 3/4 cup water
- 1/3 cup vanilla almond milk
- Dash of salt
- 1/2 a banana, whipped
- 1 T pumpkin butter
- 1 T Justin’s Chocolate Hazlenut Butter (sooooo glad to have this back in my life!!)
- Chai flavored almonds
The flavors in this bowl were out of this world!
I ONLY like rainy days when they happen to fall on a Saturday and I have nothing to do but lie around and drink hot chocolate but atleast they make for the perfect lighting!
Lunch was a salad with leftover crispy shrimp, mmmmm + cashews, dates and 1/3 of a GIANT Honeycrisp apple. Seriously those apples are on steroids.
I came home to some delicious dinner eats but alas no more perfect rainy day lighting 😦
Why hadn’t we thought of tempeh tacos before?
I cut the tempeh into 12 pieces and threw it in a ziplock with soy sauce, hoison, lime juice, salt, garlic powder (because I was feeling lazy this morning and I’m trying not to have garlic smelling hands for the rest of my life) and cumin and let it marinate allll day.
Then I frantically ran to Best Buy because it’s a well-known fact that your printer ALWAYS runs out of ink on the day you need it to print out a paper.
Back to the tacos. Actually I have nothing to report because Joey did it all 🙂
Well maybe I do have one thing to report and that’s that these were 100% awesome!!
I actually don’t like Mexican food all that much but fajitas make going out for Mexican so much more enjoyable. Love love love them!
Highpoint of my day: Someone turned in a court summons to the lost and found at the library and I got to hand it to my boss and tell him “You’ve been served” — yes, this is my idea of a good time.
