Flash to the Past
Oh hello! Sorry to have deserted you yesterday. My 4000 level English paper may be the death of me. I worked on it for hours and came up with one measley paragraph and absolutely no idea where I was going with my idea…
Such is my life.
Let’s return to happier times in the past, shall we?
Wednesday and Thursday breakfasts, respectively.
Is your mouth watering yet? I know mine is.
How about some afternoon eats?
This is what happiness looks like on a Wednesday afternoon.
Thursday afternoon featured a delicious and slightly sweet salad. I added honey to my usual balsamic, mustard, olive oil, salt and pepper dressing. Then I added some chai flavored almonds and red onion to my spinach.
Honey, almonds and red onion are awesome flavors together 🙂
Plus half of a honeycrisp. I’ve decided these apples freak me out and that they’re probably so big because they’re some genetic mutation gone awry. But they sure are tasty with vanilla cinnamon peanut butter 🙂
I realized I don’t give Joey enough credit. He made Mama Pea’s Vegan Eggplant Burgers (and let me make it clear that he chose this recipe!) for himself on Wed and I got to have the leftovers on Thurs. Perfect dinner solution since he is home Wed and I am home Thurs.
These were awesome!!! And he even took pictures. I’m beaming with pride ha ha
I should let Joey cook more often 🙂
By the way, apparently I’ve used up all my picture space. Do I HAVE to buy more?? Anyone know what to do?

Have you been resizing your pics before you export them to wordpress.com? You should be able to store lots of pictures on a wordpress.com blog without any issues. If that’s the issue, just e-mail me and I can try to help you out with that. If not, I have no idea!
P.S. The size of all non-organic produce creeps me out a bit, but honeycrisp are delicious nonetheless.

It was a mix of eggplant, olives, spices and sauces. You can find the recipe on peasandthankyou.com and I definitely recommend it!
