Rainy Day Run
I was soaked after my run this morning and no not because I was sweaty. Because it was a drizzly morning and I refused to let a little rain ruin my run. The giant puddle I splashed through on accident almost made me turn around but I said “No, Mother Nature you are not ruining this for me. You and your wind and rain can bite me!” And I kept on going.
I tried to take a picture of myself but all I got in the picture was my legs and it looked more like I peed my pants than conquered 4 miles in the rain…
Run was followed by a hot shower, hot oats and a few sips of hot tea before I had to run out the door.
I assure you those few sips were wonderful.
But it was nothing compared to this bowl of oats. A dash of salt in oats in genius I tell you, pure genius.
In the mix:
- 1/2 cup rolled oats
- 3/4 cup water
- 1/3 cup vanilla almond milk
- Dash of salt
- 1/2 a banana, whipped
- 1 T pumpkin butter
- 1 T Justin’s Chocolate Hazlenut Butter (sooooo glad to have this back in my life!!)
- Chai flavored almonds
The flavors in this bowl were out of this world!
I ONLY like rainy days when they happen to fall on a Saturday and I have nothing to do but lie around and drink hot chocolate but atleast they make for the perfect lighting!
Lunch was a salad with leftover crispy shrimp, mmmmm + cashews, dates and 1/3 of a GIANT Honeycrisp apple. Seriously those apples are on steroids.
I came home to some delicious dinner eats but alas no more perfect rainy day lighting 😦
Why hadn’t we thought of tempeh tacos before?
I cut the tempeh into 12 pieces and threw it in a ziplock with soy sauce, hoison, lime juice, salt, garlic powder (because I was feeling lazy this morning and I’m trying not to have garlic smelling hands for the rest of my life) and cumin and let it marinate allll day.
Then I frantically ran to Best Buy because it’s a well-known fact that your printer ALWAYS runs out of ink on the day you need it to print out a paper.
Back to the tacos. Actually I have nothing to report because Joey did it all 🙂
Well maybe I do have one thing to report and that’s that these were 100% awesome!!
I actually don’t like Mexican food all that much but fajitas make going out for Mexican so much more enjoyable. Love love love them!
Highpoint of my day: Someone turned in a court summons to the lost and found at the library and I got to hand it to my boss and tell him “You’ve been served” — yes, this is my idea of a good time.

Haha I totally know where you’re coming from with the pee-pants vs. ran-in-the-rain look. Too funny 🙂 I kind of love running in the rain every once in a while – so refreshing!

I totally agree that a dash of salt in the oatmeal MAKES the bowl. It allows the flavor to really pop!
The only Mexican food I’ve ever eaten has been tacos and I love those. Wait.. nachos are Mexican too I think. Those aren’t bad either. So I guess I like Mexican. For now. Until I try more.
I wish I could go up to someone and say “You’ve been served.” That would definitely make my day.
