Summer Means…
Alternate titles for this post:
“Commence Operation: Grill Everything.”
Or
“Take advantage of outdoor pictures while they’re still possible.”
Summer means…
Giant.
Fresh.
Salads.
Outdoor dining with Mom.
Have you ever seen goat cheese with black in it?
I have, and it scared me. Beets, however, don’t scare me one bit.
It means adopting a bike while it’s nice enough to ride outside.
For the record, Joey is the one doing the riding.
It means only turning on the oven under emergency circumstances.
Replenishing your granola is definitely an emergency situation.
And for the record, this granola is amazing.
Even if you make some changes:
- 1/2 cup almonds —-> 1/4 cup almonds and 1/4 cup cashews
- 1/4 cup sucanat —-> 1 tablespoon brown sugar
- 1/4 cup brown rice syrup —-> 1 tablespoon maple syrup
- 3 tablespoons Maple Cinnamon Almond Butter with hemp, flax, chia —-> 2 tablespoons Justin’s Maple Almond Butter
- 2 vanilla beans, scraped & 1/2 teaspoon almond extract —-> 2 extra teaspoons of vanilla extract
Fact: I almost always cut back on the amount of sugar in recipes. I like to err on the side of caution. I can always add more if I want something to be sweeter.
This granola was just right the way I made it.
Oh and remember what I said about only using the oven in emergency situations?
Well, summer means…
Patty pan season!
And baking stuffed patty pan squash is also an emergency.
Do you see the baby patty pan top??
Look, there it is!
Summer means firing up the grill whenever possible.
Even if that means losing a few good shrimp.
It also means following dinner up with some granola and peanut butter-topped vanilla Blue Bell ice cream, while watching True Grit.
Please don’t leave me, Summer.

Summer means BBQ! I looove grilling, but our complex here in Virginia doesn’t allow outdoor grilling! They are such party poopers…
I’m alllways cutting back sugar, too; especially when it comes to granola. I’d rather have it hardly sweet at all! So I love the changes you made 🙂
And ugh – your thought of taking advantage of outdoor photos while it’s light enough…I almost forgot how dark it is all the time in winter. Ugh!
Summer for me definitely means big, fresh salads. And corn on the cob :]
Right now, summer means “spending long hours learning how to balance oxidation and reduction reactions.” Woo-hoo!!!!!
But it also means, “Long runs at 6 am before it gets hot out” and “TJ’s tart frozen yogurt every night” and “Eating a bowl of plums as big as my face from the tree in the backyard.”
Summer means stuffing myself with fresh fruit while it’s still in season. I can’t believe that summer is almost over… It was still kinda dark outside when I woke up this morning, when it used to be light, and it made me start thinking that winter is just around the corner. Eep. But at least we get to enjoy some Fall first, and I’m looking forward to it because it’s my favorite season 🙂
Cuute squash. And I want that salad. Right now. Strawberries and all, please. Summer means laying out in the sun with a good book!
okay, that goat cheese with the black inside DID scare me, but beets actually scare me, too! I don’t know why. those itty bitty pan squashes do not though, must try them before summer ends!

Summer means: cool refreshing meals and all the fresh fruit and veggies I can get my hands on! I’d like to say grilling, but I’m maybe kind of…ok I AM scared of my grill so it’s only been fired up a couple of times this summer…when I had friends over who could do it for me! 😉
That granola looks delicious!! Love PB granola! Can you believe I’ve never had pan patty squash? I’ve seen it a couple of times recently but I didn’t know what to do with it! Haha!

Stuff it! Or just roast it, which is equally delicious. I’m kinda scared of the grill too. And I can never remember to turn the gas on so I spend 5 minutes thinking it’s broken before I realize it’s not lighting because I don’t have the gas on.
