Oh hey, it’s that time of the week again.

This may come as a huge shock to you, but…

I love breakfast.  Like a lot.  Can you believe there are people out there who don’t even eat breakfast?  (I’m looking at you, Mom)  And can you believe I even used to be one of those people??

Actually, even I don’t remember not eating breakfast.  Maybe I always have eaten breakfast, but seeing as I can’t remember what I used to eat, it clearly wasn’t very good.

My how things have changed.

When your boyfriend brings home red velvet cheesecake, throw it on some oatmeal and call it breakfast.

Friends, there’s a very thin line between breakfast and dessert.  Very thin.

And for me it gets thinner every day. 

While I’ve stopped doing the whole “Surprise, here’s another bowl of oatmeal I had for breakfast” thing, I still secretly snap pictures on an (almost) daily basis.

You know, in case someone should doubt that I actually eat a giant satisfying breakfast.

Or if I need a reminder as to why  breakfast is the best meal of the day.

Hot oatmeal has been sneaking in lately.

I could lie and pretend it’s because it’s been rainy or chilly or something, but really it’s because I’m too lazy to throw oats, milk and flax in a jar at the end of the day.

My energy is replenished enough by morning time to cook up some oats on the stove.

Toppings should always be a plenty.

Overnight oats topped with crumb cake, granola and peanut butter.

Like really a plenty.

Sometimes a girl just needs to go back for more toppings.

Aforementioned toppings plus homemade jam and coconut butter.

And when oatmeal is too labor intensive, there’s always pancakes.

Which only requires staring at the stove and patiently waiting… oh wait, that’s exactly how oatmeal works too…

Doughy pancakes, layered with homemade jam and granola and topped with chocolate hazelnut butter, maple syrup and what-do-ya-know, more jam.

Watch out for that nut butter waterfall.  It’ll get you.

Please ignore the watery milky overnight oats.  I clearly don’t know how to adjust my oatmeal to milk ratios.

Instead, focus on how the amount of peanut butter in my breakfast has slowly but surely increasing.

And I’m totally okay with it.

If there’s one thing I’ve learned this week, it’s that I need to be reading this blog.

CCK’s Snickerdoodle Cookie Pancakes.

Katie wasn’t kidding about this recipe making “super-fat pancakes.”

And then this happened.

Chocolate hazelnut butter, almond milk and maple syrup microwaved for a few seconds and mixed together.

And then some granola found its way in there.

Healthy never tasted so decadent.

    yum. a post full of breakfasts. it doesn’t get much better than this! I love the fine line between dessert and breakfast 🙂

    Oh wow – I just finished my lunch and now want dessert like crazy! Everything looks so great that I feel kind of silly saying the best thing I ate today/yesterday was a mango.

    haha i love your thoughts on the very thin line between breakfast and dessert. i seriously never thought of it that way! that must be why it’s totally my favorite meal of the day, and i eat breakfast food for dinner 80% of the time during the summer.

    On my vacation, my grandparents made us ricotta pancakes with raspberry syrup, and they were wonderfully light and fluffy with only the faintest hint of ricotta taste. Perfection. Definitely not my usual breakfast, but I loved it nonetheless.

      Your grandparents are fancy! I think my mom would die to have something like that. She’s a huge ricotta fan!

    I’ve always been a breakfast fan–I think it’s half of why I’m a morning person. Why lay in bed if I can be awake and EATING? Oatmeal on cake is a very legitimate breakfast, by the way. I will eat cookies for breakfast, no oatmeal justification, so I certainly can’t judge. Wow wow wow all your food looks so good!

    I am so jealous of your breakfast prep energy! If I don’t have overnight oats in my fridge or someone else to make me pancakes, chances are I’m having cereal and/or a smoothie. But I’ve got to say this post looks delicious and you’ve inspired me to step up my breakfast game, so maybe I’ll have something cooked tomorrow morning 😛

    I don’t even think I need to tell you how much I loved this post. Breakfast is my absolute favorite meal of the day and probably the only reason I’m so eager to get out of bed at ridiculous hours lol. I’ll never understand how people can start their day without eating breakfast, either… I’d never pass on the opportunity to enjoy the goodness that comes with breakfast food which is why I often eat it three times a day 😉 And I totally agree the that line between breakfast and dessert is extremely thin… my favorite breakfast involves lots of chocolate pudding, and I wouldn’t have it any other way 😀

    Oh man, I think I love coming up with different toppings for oatmeal than I do… actual oatmeal. The crumb cake/granola/pb combo sounds crazy-good, I might employ you to be my personal breakfast chef…
