Thursday Morning 10K

I was feeling a little lot blah yesterday.  I was tired and just wanted this week to be over.  I totally believe I was in a funk because I hadn’t ran or cooked up something especially good in what felt like a millenium but in all actuality was only a couple days.

I was SO excited to look up the forecast for Thursday and see no wind.  FINALLY!

I was determined to run so I did a warm up mile on the treadmill then put on my gloves and headed outside for a wonderful 5.2 miles rounding out my total to a nice 10K.  I feel like I can conquer the world after I get in a good morning run.  Anyone else with me on that one?

The Run:

  • Total time = 57:46
  • Pace = 9:11 — I felt so slow during my first mile outside and was shocked to see I ran it in 9:07!!

I may or may not have been wheezing during the last quarter mile…

Oh one more thing I blame for my funky mood?  No hot oats this week!!  Say what?  This had to be remedied ASAP.

So what was in the crazy OIAJ concoction?

Homemade peanut butter, of course but also… pomegranate seeds!

This was the first pomegranate I’ve ever eaten.  I had to look up how to de-seed them and was glad I did because apparently there’s a special way to do so.  Maybe I’ll do a post on how to do so later but for now you can refer to this.

I didn’t get any pom juice on my nice school clothes.  I did dump the contents of the blender ALL OVER MYSELF about half and hour later but more on that in a minute.

These were whipped banana oats + pinch salt + 1/2T ground flax, topped with pom seeds and orange cranberry granola.

I was blisfully full.

I made the vegan mac and “cheese” sauce as part of lunch.  I’ve made this twice before — here and here.  This time I used rice instead of noodles and mixed in some steamed bell pepper and 1.5 carrots.

While making the sauce I knocked the blender over, spilling it all over my jeans and the kitchen floor.  Fail.

C’est la vie.  I just started over and everything turned out just fine.

SO.MUCH.FOOD.

You better believe I ate every “cheesey” bite.

This kept me full for hours and good thing because the bus ran into a huge accident on the way home and the highway was closed so we had to sit in traffic and find another way home.  It took a full hour to get back from work.

I went to bake my pumpkin seeds and discovered that they were sprouting…

Word to the wise: don’t let your slightly wet pumpkin seeds sit out for almost a week.

Off to watch the Halloween episode of Glee.  Time Warp, anyone?

    Those oats look so good! I’m proud of you for not getting any pom juice on you – I cannot do pomegranates for that reason alone! 🙂
