Me oh my I love pie

And last night I made my very own pumpkin pie from scratch.

Okay, so we bought the pie crust but cut me a break I cooked my own pumpkin for crying out loud.

The pie was dairy-free to boot!

My mom deemed it “the best pumpkin pie she’s ever had.”  What a compliment!

We were supposed to let it cool for 2 hours after baking but who can sit in the same room as a cooling pie without eating a piece before the 2 hours is up??  Not the Dorsey family, that’s for sure.

I’m actually really glad I used a carving pumpkin instead of its sweeter relative the sugar pumpkin because the pie was really mild and not overly sweet.

Raise your hand if you’d like a repeat of this pie at Thanksgiving.  I’m raising my hand.

I’d like to say the pie was the highlight of my Tuesday night but everything else was good too.  Family, Halloween movie watching and jambalaya!!

This recipe is from Cooking Light if you’re so inclined to make it.  I asked my mom if it was authentic tasting and she said absolutely not!  Ha ha, oh well it tastes pretty darn good to me!

Earlier day eats included a thick pumpkin smoothie

In the mix:

  • 1/2 cup pumpkin
  • 2T pumpkin butter
  • 1 cup almond milk
  • 1/2 frozen banana
  • pumpkin pie spice

Cinnamon raisin bagel with butter on the side.

    Cooking Light is like food porn. It’s great! And that jambalaya looks fabulous!
