Running Returns

October 22, 2010

I went on my first run since the half marathon yesterday morning and it was just as wonderful as I’d hoped.  My legs felt rested and ready to go! 

4 miles in 35:56 🙂

My calves are feeling it now though.

Pre-run snack was a couple of dates — I love these!

Post-run breakfast was another simple bowl of nut butterless oats.  What is wrong with me?!

I’ve been adding in my banana at the beginning lately and it just breaks up on its own when I stir the oats.  Usually I add it in at the end and whisk really hard to whip the banana.  This new method is so much easier!

As I mentioned yesterday, I bought flax seeds for the first time.  I had chia seeds in my hand but they were $7 more and the whole flax seeds were $2 cheaper than the ground ones.  I bought them and figured I could ground them on my own.  Look at me saving all kinds of money 😛

Couldn’t have been easier.

1t went into my oats.

Topped with cherry vanilla granola (Does this stuff ever run out?  I’ve been “finishing it off” for weeks!) + peanuts/peanut dust + peach jam, yummmmm.

I got to school earlier than usual today so I could meet with my advisor because I needed to hear him tell me I had everything I need to graduate in May.  Turns out I do, or I will after I sign up for classes next week.  I then turned in my grad paperwork and now all I have to do is show up to graduation, YI-PEEEEE!

It was one of those leisurely fall days where a cancelled class freed up my day so I could spend it reading, eating and tree gazing.

Joey made Baked Goat Cheese and Roasted Winter Squash over Garlicky Fettuccine (whoa, Cooking Light, a little long of a name, don’t you think?) on Wednesday and was kind enough to portion out the leftovers so all I had to do yesterday was grap the container out of the fridge and toss it into my bag for lunch.  SA-weeeet.

Uhhhh, kabocha squash is amazing!!!  What hadn’t anyone told me?

Apparently the goat cheese wasn’t cooperating and kept breaking apart but I didn’t notice because I was too busy mmm-ing and ahhhh-ing over the taste of my previously long lost cheesey friend.  Goat is one cheese I’m willing to splurge on every now and then.

So so delish and get this.  I ate lunch at ~2:15 and by the time I left work at 6:30 I still wasn’t hungry again yet.  This is unheard of!

Good thing there’s more leftovers in the fridge 🙂

I joined the fam for dinner, which was a no bean chicken chili.  Deeelish.

I then returned home and ate way too many cashews.  That $11 bag will be gone before the weekend is up.

So what do you get when you add delicious food, family, sunshine and fall colors?  One happy food blogger.  I almost skipped to the bus.  Almost.

What made you happy today?

How about the simple fact that it’s Friday?  Wooo-hoooo!

    Baked goat cheese? With garlic and squash? YUM!

    What am I happy about? That I’m leaving early from work today and getting a pedicure because dangit, I want to!

    This morning had me smiling because I was super cold and went up behind the husband and put my freezing hands under his shirt on his back. He jumped about 20 feet into the air. It washilarious.

    Today was Breakfast Buddies at school with my youngest son! I went to eat “breakfast” (if that is really what they want to call that) with him, his little smile lights my day!

    I bought whole flaxseeds and I’m never doing it again. Or at least not for a LONG time. Since I don’t have anything to grind them with I have to use my mortar & pestle which is such a pain. How they did it in the past I don’t know.. or maybe they just weren’t so wimpy. 😉

    I actually prefer the whole flax seeds over the ground. I’m aware they’re not as nutritionally sound as the ground because alot of them, um, pass through whole, but I love the flavor and texture they bring to the food!
