Achievement
Every wednesday night when I’m just getting home from work at midnight I tell myself “sleep in tomorrow!!” and without fail I wake up Thursday morning just as early as if I had gone to bed at ten, itching to run. Yesterday was no exception, except for the whole wanting to run part.
But since I was awake and had nothing else to do I told myself just to get out there and see how I felt. I’m so glad because it turned out to be a beautiful morning and a lovely 3.6 mile run 🙂
There’s something so satisfying in the acheivement of a goal, no matter how big.
I think the change of scenery helped, as I decided to forego my normal route and venture into a nearby neighborhood. Everyone’s fall/Halloween decorations are so cute and definitely helped to distract me from the fact that I was running up a huge hill!
Plus I knew this awesome breakfast was awaiting me so how could I not be in a good mood?
OIAJ, Fall Style:
- 1/2 cup rolled oats
- 3/4 cup water (don’t complain that you can’t see this, I don’t care as long as it goes with my color scheme)
- 1/3 cup vanilla almond milk
- pinch of salt <—– totally loved this! But are you really that surprised?
- 1/3 banana, cut into slices
All went into here
I layered oats with mixed berry compote then topped with a little treat
Yes, that is half of a crumbled up piece of pumpkin bread

If my hand had fit in the jar I probably would have scraped it clean…
Can I tell you how stress-free my Thursday morning was? SO stress-free! This never happens!! I was so happy with myself for making my Thursday lunch on Wednesday evening because all I had to do was pull the container out of the fridge and toss it in my bag. Along with another piece of my honeycrisp apple. Those two apples have lasted me all week!!
Anyways, on Wednesday I crisped (is that a word?) up some tofu then combined it with a spoonful of leftover quinoa mixture and a tiny sprinkle of cheese. All rolled up into an Ezekial wrap, which are still awesome, by the way.
I unfolded my creation to give you a peek of the inside.
Why yes, this was darn tasty.
And super filling! Too bad I didn’t have room to fit in an orange-dyed glazed donut with black sprinkles because there sure were a lot up for grabs at work ha ha
How we spent $100 dollars at the grocery and only made it through Wednedsay I’ll never know but I had to come up with something on the spot and with not much to work with for dinner.
I decided to sautee some spinach in olive oil, salt and pepper then I microwaved an egg for 50 seconds and plopped it on top my greens. Plus Brown Cow vanilla and the other half of my crumbled piece of pumpkin bread.
I’m not a huge fan of eggs but I’ll give them one thing and that’s that they’re fast and easy! Plus this actually tasted pretty good!
I have so so much homework to get done but all I want to do is bake…
Maybe I should go back and read my own post about how great a sense of achievement feels. Or maybe I should go to the store to buy applejuice so I can make pumpkin butter.
I have two papers, a midterm, a quiz and a presentation to give next week 😦 OH and it’s also race week. I’m about to be stressed to the max. Don’t despair if I disappear over the weekend, I’m not dead I’m just on homework lockdown…or running 11 miles.

What have you achieved lately?
OIAJ! I want that desperately. When I first saw the OIAJ thing going around the blogworld I thought it was kind of silly and swore that I would never do it.. then one of my nut butter jars was almost empty and I couldn’t resist giving it a try. Now I’m a convert. 😀
I think the only thing I’ve achieved recently is that I’m now blogging more consistently and I’m finally starting to get serious about the courses I’m upgrading. Other than that my life is pretty achievementless. I believe I just invented a word.
