Short and Sweet

Let’s keep it to a minimum today, shall we?  I have lots to accomplish in terms of homework tonight.

I added blackstrap molasses to my pumpkin oats this morning.

Looked scary, tasted good!

Usual pumpkin oat mix-ins topped with cherry vanilla granola, peanuts and peach jam.

The gloom today was perfect for morning pictures 🙂

I told you these apples were HUGE

Honeycrips certainly are crisp!

Half of this monster was eaten with peanut butter.  P.S. fully expect to see OIAJ tomorrow for breakfast.  Are you as excited as I am??  Probably not 🙂

I came home from, work saw leftover chili in the fridge and decided it needed cornbread to go with it.  Those two just go hand in hand don’t they?  Kind of like apples and peanut butter or Lauren and oats…

I kinda winged this recipe.  Flour, cornmeal, sugar, milk, what else do we need?

I think I added some apple cider vin, olive oil, chia seeds, water.  I coulda used an egg since I’d already de-veganized it by adding milk but I was only making a mini mini batch and I didn’t want to use a whole egg and how exactly do you use half an egg?  Chia egg sounded easier!

I poured it into 4 muffin tins and baked on 400 for 10 minutes.  No really, that’s all the time it took.  I might have taken longer to pry them out of the tins that it took to bake them.  Remember cooking spray next time, Lauren.

Let’s hope they taste okay.  But even if they don’t we all know I’ll still eat them 😛

I told Joey he’d have to bring me a pumpkin beer to try at work so I don’t miss a night but he wouldn’t take me seriously.  Fine, Joey, fine!

What are your favorite hand in hand foods? Ice cold milk and an oreo cookie, anyone? 🙂
