Beet Still My Heart
Ahhh, the joys of having someone to run with! Joey and I set out for a lovely evening run around 7 pm. The thought of dinner waiting in the fridge helped me stay focused.

- Mile 3 – 9:46
- Mile 4 – 9:37
Lucky for us it’s been rainy and cloudy all day so by 7 it had stopped raining and was pleasantly cool 🙂
- 2T apple cider vin
- 1T EVOO
- 1/2T murple syrple aka maple syrup
- 8 organic raspberries all mashed up
When I cut into the biggest beet it was a mix of colors, so fun!
“Just Beet It” salad:
- Organic greens
- Navel orange cut into pieces
- Blueberries
- Raspberries
- Pepitas (pumpkin seeds)
- Sunflower seeds
- Beets
- Raspberry Vinaigrette
This salad really needed some goat cheese but I couldn’t justify buying it right before I left. It would just go to waste while I’m gone!
Can you tell it was pouring earlier? Believe me it was!

Fast forward to this morning: plate o’ thick rolled oats
I made these with 1/2 a cup of almond milk which I attribute to the thickness. Mixed with blueberries, raspberries and a new-to-me nut butter.
Justin’s Chocolate Macademia. Talk about delicious! I can’t believe I’ve had this sitting in my pantry for weeks and hadn’t tried it yet!!
