WIAW: I Am the Carb Queen

Wasn’t the low-carb fad stupid?

Carbs provide you with energy.  And allow your brain to function.  And taste damn good.

As I was going through pictures of what I ate yesterday, I realized I’m a carb fiend.  And damn proud.

Apparently my love of carbs also causes me to use the word “damn” a lot. 

But enough talking, and more showing.

Peas and Crayons

Pre-run fuel:

Unpictured banana half + a smear of peanut butter.

Yes, “a smear” is an exact measurement.

Breakfast:

Aka, the fluffiest pancakes ever.

I saw Heather make these a few days ago, and knew they had to be mine.

And she was right, they are fantastically fluffy.

IMG_2900 Topped with chocolate hazelnut butter “sauce” (aka thinned with a bit of almond milk and microwaved for a few seconds) and peanuts.

Besides the fact that these were insanely fluffy, I think what made them so good was the fact that they involved brown sugar.  My usual pancakes don’t have any sugar at all, so these had my taste buds dancing.

I halved the recipe, made 7 fluffy pancakes, ate 3.5 and saved the other half for later this week — score!

Lunch:

Assembled at my parents’.  Because feeding yourself other people’s food is always more fun.

If only it had been my mom’s homemade mac and cheese, too.

Afternoon snack:

Only this is a recycled picture and it was actually almonds, raisins, peanuts and chocolate chips.  And I actually did take a picture, I’m just too lazy to go get my camera. <— Bad blogger.

Dinner:

IMG_2857 Grilled eggplant subs with fontina and tomato jam.

Again.

Eaten at another horribly played Rockies game.  It was the last game I’ll attend for the season and not a good note to end on.

Even though Tulo made a special guest appearance.  And struck out…

Nighttime/post cold Rockies game snack:

Um no, I did not eat a whole loaf of zucchini bread.  I don’t love carbs that much.

But I did have a slice.  And some warm almond milk.  Are you surprised?

Most of the time, I try to make my baked goods healthy, but I wanted real zucchini bread.  With regular old flour, sugar and oil.  So sue me.

I used this recipe from Brittney.  Thanks, Brittney! 

It’s moist, it’s dense but not overly so and it’s delicious.  Just the way zucchini bread should be.

So I think I had the bases covered yesterday — pancakes, pasta, bread and… more bread.  Go me!

    Low- Carb is ridiculous… esp. for those of us who eat little-no meat and who are also distance runners. Carbs= Needed fuel!

    I could definitely eat a whole loaf of zucchini bread..I think I DO love carbs that much 😀 And those are the tallest pancakes I’ve ever seen…

    What would we do without carbs?!? I’d probably day if I was’t allowed carbs anymore!
    And a smear is an valid measurement indeed 😉

    Yay for fall!!! You have the best eats!! Maybe its because Im addicted to carbs too 🙂 I love making food at my parents house (so cheap). Your eggplant dinner looks so good I may try it out myself!!

    I love carbs way too much! I’d have an all bread diet if my body didn’t require other forms of food too. And I’m glad you liked the zucchini bread 🙂 I should probably start looking into your healthy baking ways though…

      If it has a vegetable in it, it’s healthy enough. In my opinion anyways.

    I adore carbs. Especially when they come in the form of delicious hearty breads like Udi’s (just had one of their sandwiches today, so they’re in my head…haha). Fav baked good would definitely be brownies. Anything rich, fudge, and chocolate-y will always have my heart! 🙂

      Oh god, don’t even get me started on Udi’s. OBSESSED. I’ve never liked brownies. I know, I’m weird.

    Wow, those pancakes look amazing! 😀

    I love carbs too. With the exception of when I eat avocadoes with mozzarella/scrambled eggs – which seems to satisfy me on its own – I pretty much always have carbs with all my meals – there’s so much variety to choose from!

    Favourite baked good would probably have to be muffins/cupcakes depending on whether my sweet tooth is needing the frosting, I love baking muffins with fruit in them – they taste so fresh straight out of the oven 😀

    We can rule the carb kingdom forever 🙂
    I’m always lacking on protein. But proteins…they just can’t satisfy you like carbs can.

    My favorite carbs are bread or cereal. You know how they say freshly baked cookies sell a house? I’d be more inclined to buy a house with some freshly baked bread 🙂

    I love carbs, probably a little too much, but I’m totally ok with that! Whenever people tell me they’re not eating carbs I get a little sad. Because carbs are so wonderful.

    I’m working on loving my carbs. Your eats look good!! What are those pancakes, 3 inches thick? wow I’m going to have to try them. I’m also going to need to try the sauce. yum!
    favourite baked good? um….gosh do I have to pick one?
    I made sweet potato fries last night that looked just like those!!

    FLUFFAAAAY! Since making these, my entire idea of pancake making has changed…I’m not on a mission to only create super fluffy pancakes! Haha!

    That eggplant sandwich looks sooooo good! I just pinned the recipe!

    I am a total carb queen…you should see me at Italian restaurants where they bring out the bread for dipping in oil…oh wait, that loaf is meant to share?? 😉

    And baked goods are my weakness…soft, chewy cookies, muffins, doughnuts, quick breads…don’t make me choose!
