Of Things to Come

I’m not going to lie and pretend it wasn’t painful saying goodbye to all my fabulous co-workers last night.  I’ve never been so sad to leave a job.  Probably because it wasn’t so much a job as it was a place to hang out with people my own age and get homework done. 

Plus the occasional Oreo Slide competition during closing shifts.  What you don’t slide Oreos down your face at work?  Sigh, I never want a real job.

Needless to say, I was feeling a little down when I got home. But, my spirits were instantly lifted when I realized it was dinner time and the sun was still out!!!!!!

Clearly I was excited.  And I still am, because as we progress further and further into the year that sun will continue to stay out long enough for me to capture some dinner pictures.  I.Love.Summer.

Now if only the weather would cooperate on Saturday mornings.  I need to get to the Famers’ Market!

Not only can you expect to see sunny dinner pictures in the near future, but you can look forward to seeing raisins.  Lot and lots of raisins.

Stop cringing, Mom.  Raisins are good.  And so is oatmeal.

Did you know I used to hate raisins?  Who am I?  Or better yet, who was I?  Raisins rock.

I remember eating oatmeal all summer last year and after breaking a sweat while eating it this morning I was left wondering ‘What the hell was wrong with me last year??’ 

Expect those raisins to appear in overnight oats from now on.

Also, expect those overnight oats to be covered in a crumbly muffin.

Don’t even ask me why I was baking muffins today instead of writing my final paper or studying for one of the 3 finals I have next week (and by next week I mean they start on Saturday!!). 

Procrastination is my forte.  Further proven by the fact that I’m blogging instead of studying and that earlier today I was yoga-ing instead of studying and then napping instead of studying.  I’m seeing a trend here.

I saw the recipe for these muffins in Cooking Light and was ecstatic when I realized I had all the ingredients on hand.  That wouldn’t normally be the case but it’s baseball season and Joey needed those pistachios.  None of which he’s eaten since we bought them two weeks ago.

**Note: the original recipe includes directions for a glaze but I was out of powdered sugar so mine are glaze-less.  Also I used almond milk instead of buttermilk because I wasn’t about to make a trip to the store for one ingredient.  Although that would have wasted more time so maybe I should have.

These took all of a half an hour to make (start to finish) and they look so fancy.  Fanciness makes food taste better.

Clearly I chose to taste test the one that was bigger than all the others.

Anyone else watching the Royal Wedding tonight tomorrow morning??  My mom has promised me breakfast if I get up with her at 4 AM to watch it live.  She knows the way to my heart, that trickster.

Today I woke up at 7 AM and tried to force myself to fall back asleep before finally getting out of bed at 8 AM… after going to bed at 3:30 AM, yikes!

Today I realized a bought the wrong kind of tea.  Curses!

Lemon Ginger = Amazing.  Green Tea Lemon Ginger = Bland. 😦

Today I ate the last of the oranges we bought last week, after telling Joey “I don’t like oranges.”  I ate 2/3…

Today I realized my pantry is now housing some questionable products.

Where am I?!

Today I was disturbed by the amount of cookies and candy in my pantry and looked to my fridge to restore faith in myself but realized there’s only mass amounts of restaurant leftovers in there.  Some of which I took for lunch, alongside an orange, which “I hate.”

I’d like to point out that those sweet potatoes were home cooked, at least.

Today I found this note in the bathroom and stuck it in my bag, then realized how happy it made me and stuck it back on the wall, hoping it would make the next person just as happy 🙂

Today I am sad because it’s my last day of work.  Turns out you can’t keep working on campus if you’re graduating.

There’s even a poster displaying my name as one of the graduating staff members.


I’m feeling sentimental today, graduating college is so bittersweet.  Ain’t no other way to describe it :/

Long Day, Late Night

It’s another 2 AM closing shift for me tonight.  I’m planning on getting a paper done, but judging from last week’s closing shift, I’ll probably manage to get nothing done Smile with tongue out

I swore I was going to let myself sleep in.  I made it till 8:30.  For those of you with “grown-up jobs” that probably does sound like sleeping in but in the world of college students that probably sounds like the crack of dawn.  Hence, the iced coffee by my side right now.  Let’s hope I can stay awake for my last ever closing shift.  It’s bittersweet.

I tried something new(ish) this morning for breakfast, a smoothie in a bowl, aka a SIAB.

In the blender:

  • handful of spinach
  • 1/4 cup of oats
  • 1 banana
  • chia seeds

Blended and served in a bowl over another 1/4 cup of oats.  Next time I won’t blend any oats in and just serve the smoothie over the oats.

Topped with cinnamon granola and Justin’s classic peanut buttah.

A fun breakfast, although somewhat difficult to eat, plus my mini spoon kept trying to fully sink into the smoothie!

I planned on taking a rest day, but I suddenly had extra time on my hands and decided to do a short run (2 miles) plus some lifting.  It was actually really refreshing, plus workouts are so much easier to get through when you know they will only last half an hour or so.  Someone remind me to get back to yoga and stretching PLEASE.

My Denver Rock’n’Roll Half Marathon shirt never fails to make me feel like a badass.  Especially when there’s no one else in my apartment complex work out room…

My dear friend Jenn, who’s been living in L.A. for an internship this semester, is finally home and despite my best intentions to photograph our lunch at Udi’s, my excitement to catch up with her got the best of me and I totally forgot to whip out my camera.  Oops, I’m a bad blogger.  I even got something different than my usual eggplant and goat cheese panini, although I have no proof, so I wouldn’t believe me either Smile

The most annoying part of my day (thus far) was the fact that I took the trouble of taking the bus into Boulder to attend my one class and it lasted all of 20 minutes before my teacher set us free.  Waste.of.time.

I used my spare time as an excuse to go to Whole Foods, where I fully expected to leave without about 7 things I didn’t need but I surprised myself by only leaving with the essentials.

Probably only because they were out of frozen cherries again and I couldn’t find the chocolate chip banana bread I wanted! Sad smile

And in case you’re wondering, tea and raisins are totally essential.

The tea because it is seriously the best kind I’ve ever had (thanks, Dad!) and the raisins so I could make these.

Ants on a log are not just for children.  And the chia seeds were essential, so I could dump them out and use the container for said ants on a log.  Don’t worry, I dumped them into another container, not the trash.

I also whipped up some overnight oats before heading into work, because it will make my life much easier tomorrow morning when I’m all zombie like and need a breakfast that I can just pull out of the fridge.  Although I totally went home and made overnight oats at 2:45 AM last week and apparently did the same thing last semester when I closed.  I’m weird like that, and I blame Starbucks and they’re caffeinated drinks Smile with tongue out

Which reminds me, I only realized I did the same thing last semester because I came across the post while organizing/updating my recipes page.  That’s right, you heard me, my recipe page is finally updated.  That thing was seriously out of control.  Count on me to be doing unnecessary things like blog updating this week when I should be doing things like studying and writing my final college paper. 

I’m off to Foodgawk study.
