Of Things to Come
I’m not going to lie and pretend it wasn’t painful saying goodbye to all my fabulous co-workers last night. I’ve never been so sad to leave a job. Probably because it wasn’t so much a job as it was a place to hang out with people my own age and get homework done.
Plus the occasional Oreo Slide competition during closing shifts. What you don’t slide Oreos down your face at work? Sigh, I never want a real job.
Needless to say, I was feeling a little down when I got home. But, my spirits were instantly lifted when I realized it was dinner time and the sun was still out!!!!!!
Clearly I was excited. And I still am, because as we progress further and further into the year that sun will continue to stay out long enough for me to capture some dinner pictures. I.Love.Summer.

Now if only the weather would cooperate on Saturday mornings. I need to get to the Famers’ Market!
Not only can you expect to see sunny dinner pictures in the near future, but you can look forward to seeing raisins. Lot and lots of raisins.
Stop cringing, Mom. Raisins are good. And so is oatmeal.
Did you know I used to hate raisins? Who am I? Or better yet, who was I? Raisins rock.
I remember eating oatmeal all summer last year and after breaking a sweat while eating it this morning I was left wondering ‘What the hell was wrong with me last year??’
Expect those raisins to appear in overnight oats from now on.
Also, expect those overnight oats to be covered in a crumbly muffin.
Like one of these.
Don’t even ask me why I was baking muffins today instead of writing my final paper or studying for one of the 3 finals I have next week (and by next week I mean they start on Saturday!!).
Procrastination is my forte. Further proven by the fact that I’m blogging instead of studying and that earlier today I was yoga-ing instead of studying and then napping instead of studying. I’m seeing a trend here.
I saw the recipe for these muffins in Cooking Light and was ecstatic when I realized I had all the ingredients on hand. That wouldn’t normally be the case but it’s baseball season and Joey needed those pistachios. None of which he’s eaten since we bought them two weeks ago.
**Note: the original recipe includes directions for a glaze but I was out of powdered sugar so mine are glaze-less. Also I used almond milk instead of buttermilk because I wasn’t about to make a trip to the store for one ingredient. Although that would have wasted more time so maybe I should have.
These took all of a half an hour to make (start to finish) and they look so fancy. Fanciness makes food taste better.
Clearly I chose to taste test the one that was bigger than all the others.
Check out those chai specks. These are delicious. You can look the recipe up yourself. Because I’m busy…studying…
And by studying, I mean eating dinner at my parents’.
Anyone else watching the Royal Wedding tonight tomorrow morning?? My mom has promised me breakfast if I get up with her at 4 AM to watch it live. She knows the way to my heart, that trickster.
I just made muffins too…very soothing and great way to avoid other things 😉
haha, ahhh; i am trying every little thing I can to NOT do homework lately. it’s so ridiculous. i worked so diligently all semester to want to blow it in the last week…whaaa?! there’s something wrong with my logic. the muffins look so worth it, though!
and words cannot describe how happy it makes me that it’s light out until past 7 now. and soon enough it’ll be light out ’til what- 9?!
I always taste test the biggest one. And then one that is ugly. And then a smaller one because I need *just one more*. 🙂
My friend got me to agree to meet her at the gym and watch wedding coverage there. At 4. Yeah… I know…
I get up to workout at 4:30, so I’ll be up and watching it at the gym! I’m so excited!

I’m so out of the loop, I didn’t even know there was a royal wedding going on until my friend told me she bought a fake royal ring as a joke for someone. Then I still didn’t know what it was until I heard it on the radio today.
omg….DELICIOUS EATS you make me want to cook at home so bad….can’t wait to stop eating out of the dining halls at school!!!!!!

When I was little, I used to not like Raisins either!! Then I grew up and came to my senses. 🙂
your food looks so good in this sunny light!! it’s always sad closing a door, even though you know another is going to open, except this time you’re right… you don’t want a real job – it’s not all its chalked up to be. okay, okay.. it has its perks 😉 I’ve still got nerf guns at mine!
