Have you noticed how I use this jar on a daily basis?  Every morning I put it in the dishwasher and end up removing it, hand-washing it and re-filling it later.

Sometimes you need to find a graduation dress on the first try.

Dress shopping is always such an ordeal for me, it was about time I had an easy time finding one Smile

Sometimes you need to take a picture of what you’re trying on.  From all possible angles.

Sometimes you just need a grilled cheese sandwich and a bowl of tomato soup.

Especially when you’ve spent the past 5 hours shopping with you mom and sister.

This post title describes me.

And my lunch and dinner.

But first, I told you you’d see those muffins on top of overnight oats.

I wasn’t lying.

And what’s better than a crumbly chai muffin?  A crumbly chai muffin + raisins, coconut butter and peanut butter, that’s what.

I just told Joey I want to eat overnight oats for every meal.  He tried to tell me that wouldn’t be fun.  I beg to differ.

I basically spent the entire day studying paper writings and final exam taking.  Sounds fun, no?

No is right.  I get so antsy when I have to actually sit down and study/write a paper.  I find myself on Facebook just about every 5 minutes.  I eventually “took a break” to go work out.  In quotes because I brought my nutrition notes with me and studied while I biked.  I also turned off the TV in my apartment complex workout room then realized the person watching it was just in the bathroom, oops.

Anyways, back to the sauce. 

Mmm Sauce, to be exact.  Made last night and reheated for lunch and served over spinach.

If I had to list my top 5 tried and true recipes, low + slow sweet potatoes would be one of them.

Low + Slow Sweet Potatoes:

  1. Preheat oven to 350 degrees.
  2. Wash sweet potato(es) and slice into 1/2” discs.
  3. Brush with olive oil and sprinkle with salt and bake for 20 minutes, turning halfway through.
  4. Raise temperature to 400 degrees and bake an additional 20 minutes, turning halfway through.

Cooked to perfection every.single.time.

I also tossed some carrots and broccoli in with the sweet potatoes and made some brown rice couscous, then drizzled the Mmm Sauce over everything.  At first I wasn’t wowed by the sauce but then I took a second bite and for some reason “Mmmm” just came out of my mouth.

Verdict: You guessed it, mmmm.

You know what’s even mmmm-ier?  Being one step closer to being done with school.  As of today, I’m one final down, 2 more and a paper to go.  Yeah, that’s right, my school holds finals on a Saturday.  That should be illegal, I tell you.

Now Joey and I are sipping some celebratory wine and chowing down on some Shrimp Fra Diavolo and it is pure saucy goodness.

Hello, loves.  It’s finally Friday.  But not just any Friday.  It was my last ever day of college

Something about writing those words makes me slightly nauseous, but I’ll save the heartfelt reminiscing for another day.

Let’s talk about happier times.  Like when I woke up at 3:50 AM to watch the royal wedding.  Or is it The Royal Wedding.  Something tells me an event like that deserves capitalization. 

My Totally Superficial Thoughts on The Royal Wedding

  • Kate’s dress was stunning
  • I hope I don’t have to walk up to the back of my balding husband’s head at my wedding
  • Prince Harry.  Nuff said.
  • Kate’s sister looked so lovely, but wait, here name is Pippa??
  • Why don’t we wear hats like that in the U.S.?

Around 5:30ish I decided I couldn’t possible wait another hour to watch their first kiss and went back to bed.  Despite the pretty accurate rant my teacher gave about the absurdity of the hype surrounding the wedding, I couldn’t help feeling happy as I watched it.  Hate if you want, but I’m such a sucker for anything that reminds us that there’s happiness in the world and weddings definitely do that Smile 

And breakfast with my mom and sister does that too.

We chose an old “favorite.”  In quotation marks because I actually don’t like The Huckleberry, but everyone else seems to.

Tea, because it felt right after watching the wedding.

I ordered the potato latkes and was surprised and irritated when I realized latkes are fried.  Something about starting the morning out with fried food just doesn’t feel right.

At least there was some spinach and oranges to balance it out, right?

My mom told me to take a picture of her cheese blintzes.  Which I’m pretty sure she told me to do last time too.

Don’t worry, I made up for my fried breakfast by eating lots of greens later in the day.

And greens are best in the form of a Green Monster.

This empty chia seed container just happens to be the best serving dish for ants on a log.  I knew those $4 were worth it.

Weird Fact: I used to hate celery.  I mean, what kind of food requires more energy to eat it than it actually contains?  Just kidding, I don’t know if that’s actually true or just a myth but I do know I’m having a momentary love affair with celery.  Maybe it will pass and maybe I only love it because it helps get peanut butter to my mouth quicker, but whatever the case, bring on the celery!

And while we’re on that note, I seriously could not get this snack into my mouth fast enough.  I’m fairly sure I could down an entire Green Monster in one…sip?  Or whatever the equivalent to chugging is but with a straw.
