Weekend Happenings
By now you’ve probably noticed that I’ve given up the whole posting on Saturday thing. Between training runs, grocery shopping trips and working till 10 PM, there’s just not much extra time to bust out a half-assed post, so I’m totally okay with taking a day off.
Plus then it looks like I have a lot more to say on Sunday.

Spinach and Buckwheat Egg Bake.

Seriously though, I really recommend this recipe. I substituted goat cheese for the cheddar, almonds for the walnuts and nixed the nutmeg and what resulted was a creamy dream of a dish that’s perfect for breakfast or dinner. Those are the same meal anyways, right?
And if you’re like me and only have one ramekin, you can save that one for yourself (obviously) and throw the rest in a regular casserole dish.
Although, it clearly won’t be as cute.
Cottage cheese + goat cheese = bestthingever.
And speaking of best things ever, I know have a Pinterest account to organize all the recipes I’m constantly bookmarking and filling Joey’s favorites folder with.

In other news, I’m only seconds away from eating enough strawberries to become one myself.
But when strawberry season finally rolls around and they’re on sale for $2 a pint (organic, no less!) then I feel it’s my duty to buy and eat them like it’s my job.
Preferably accompanied by some cereal, almonds, chocolate chips and coffee cake.
And when I run out at home, I can always go out for froyo. Because where there’s froyo, there’s certain to be strawberries.
And granola and brownie bites and cookie dough and peanuts…
Bet you can’t guess whose cup is the one filled with sprinkles and gummy bears.
It’s the same person who kinda sorta thinks be sensitive to dairy, but is eating quesadillas and yogurt anyways.

This would mark the second time in the past two weeks that I’ve had to remind Joey of his own middle name, which does not begin with the letter A.
But I don’t have to remind him how much he loves “cheesey” kale.
Seriously easy. Throw kale in a pot and wilt slightly then mix in a drizzle of olive oil, garlic powder and 2 tablespoons of nutritional yeast.
Best for people who feel sick after eating cheese quesadillas and yogurt.
Or people who feel sick after looking at a basil plant that hasn’t grown a single leaf in about a month.
This week in half marathon training:
I’m happy to report that my 7-miler went really really well. I was looking back on old posts of mine and decided to take a tip from myself and slowww down. I think it saved me. I felt fabulous the entire time. Even during the last 3/4 of a mile that is a slow uphill climb. Take that, hill!
Then I took the most glorious afternoon nap a few hours later. I’m okay with getting up early on a Saturday to run for an hour if it means I can nap later. Who’s with me?
I put together the weirdest training plan and have myself scheduled for two more 7-milers for these next two weeks. Oh well, I’m okay with that 🙂
Off to work, then home for burgers and grilled pineapple!

Friday Fun: Pesto Recipe
Loves, do you know what today is?
It’s Friday!!
Okay, so now that I’m not in school any more the days kind of all feel the same and I have to work tomorrow anyways, but knowing that most people are about to embark on two free days makes the mood a little brighter, doesn’t it? Or maybe I’m the only one who thinks good moods are infectious.
Anyways, Friday calls for a day of rest pour moi and it also calls for going all out on breakfast, right?
Hot oaties cooked in almond coconut milk.
Topped with not one nut butter, but two and not one kind of coffee cake, but two.
I’m not going to lie, I had a weird night’s sleep. I’ve been up by 6 AM for the past few mornings to run with Joey, because unlike me, he has a real full-time office job and has to fit in his runs before work. Guys, 6 AM is early for me and I would be lying if I said I didn’t just feel like going back to sleep after I turned my alarm off.
I swear, it doesn’t matter if I go to bed early and get a decent amount of sleep, waking up as the sun is still rising just makes it feel like it’s too early to be up! Of course today, my day off, I woke up on my own at 5:45 AM. Seriously, body? Get it together, will ya?
Despite all my moaning and groaning about it being too early, I felt like I rocked all my runs this week. Let’s hope my 7-miler tomorrow is more successful than my 6-miler last week. I’m not going to lie, I’m nervous!
But this isn’t a post about oatmeal. Or sleep. Or 7-mile runs that strike fear to my heart.
It’s about pesto.
I can’t get over how dang good this pesto is. I’m resisting the urge to call it besto. As in the best pesto: best + pesto = besto?
Okay, enough lame jokes for today.
Amazing Garlic Scape Pesto
For those of you who were smart enough to tuck some garlic scapes away in the freezer. Or for those of us who are good at stockpiling recipes and hoarding them until garlic scape season rolls around again.

1/2 cup raw almonds
-
2 tablespoons nutritional yeast
-
generous sprinkling of salt
-
4-5 garlic scapes
-
juice of one average sized lemon
-
3 tablespoons olive oil
-
generous handful of spinach
**You could use basil in place of spinach if you’re unlike me and haven’t managed to kill your basil plant.
***I’m assuming you could substitute parmesan cheese for nutritional yeast.

Add almonds, yeast and salt to a food processor and pulse until mealy.

Remove almond mixture and add garlic scapes and lemon juice to the processor, pulsing until scapes are chopped.

Add almond mixture and olive oil to processor and process until combined. You may have to scrape down the sides a few times.

Once combined, add in spinach (or basil) and process until pesto consistency is reached.
Step #5 would be, “try not to eat the entire batch straight from the processor with a spoon.”
Gah, so good. If I do say so myself.
The best part is that it’s good with everything!
As a chip dip.
In a wrap.
As a pizza sauce.
I swear it’s under that cheese and marinara.
I think know Joey’s favorite way to use it was when we he mixed it with some Greek yogurt and used it as a sauce for some shrimp and zucchini roll-ups.
I should probably go out and get some more yogurt as a thanks to him for putting everything away in our apartment while I was at work last night. Can I just say, best surprise ever?
Oh yes, I can.
Off to clean the old apartment (bleh!), run some errands and pick up some more paint colors. The search for the perfect bathroom/living room color continues!

In the Midst of the Move
My posting mojo is all off this week due to my 2-day absence. My Reader had something like 80 posts to read and now I just feel behind on everything 😦 But I’m doing my best to power through things. My apartment still looks like a tornado hit it.
Am I the only one who hates having a messy living space? It makes me feel so disorganized!
Good thing I have tomorrow off and four days off next week. Oh wait, that’s not a good thing because I still have bills to pay… will someone remind my manager of that fact?
Anyways, how about some random and badly lit moving pictures, huh?
First meal in the new place was a tortilla pizza. See, I know how to be resourceful when I really need to.
This is what you do when your sleeping on a mattress in the middle of your living room and obviously don’t have bedside tables.
Which reminds me, I need to toss this “Beer” sign.
I’m the opposite of a hoarder and have been throwing everything away. For someone who’s extremely emotional, I certainly have no qualms about tossing things that are supposed to have sentimental value.
Or things that have sentimental value to others. Joey has been whining about the loss of Grumpy Old Men and Grumpier Old Men since yesterday. I wish I was kidding.
Lunches have taken place in odd places such as this.
Clearly, we don’t have real chairs here yet.
And because everything else in this apartment is just thrown together, lunch probably should be too.
On second thought, I shouldn’t have given this stool back to my mom. It makes such a nice backdrop.
And the view was even better.
Finding the Garmin in this pile was like looking in one of those “I Spy” books.
Note: There are way too many stuffed bears in this picture.
I think we all know what I did with them. If not, see Grumpy Old Men, above.
And speaking of good views, at least we were able to take a moving break and head to the Rockies game where we had tickets behind home plate!
For the record, Troy only gets cuter the closer you get.

Home plate tickets are awesome. It makes it easier to see Huston Street blow it in the top of the 9th.
This post should be called “How to be sarcastic.”
But I assure you, I’m not being sarcastic when I say I love the color of our room!
Don’t judge my bed-making skills or my old deflated pillow, I love that thing. Actually it’s Joey’s but I’ve commandeered it.
I love the way the mellow green contrasts with all the white in our room. See?
Now if only we could find a bathroom color we like.
And if the massive piles of stuff could put themselves away.
And if I could suddenly be gifted with an eye for design.

What color is your room/bathroom? I think this is the first time I’ve had a “normal” colored room. I’ve had bright yellow, purple, hot pink and bright blue.
